I am visting my mom right now and she is still at work, I want to make a nice dinner idea for her, any ideas? She will be home in about 2 hours so something between that time. thanks

Pasta w/ shrimp and tomato-wine sauce (approx. 2 servings)
Ingredients:
1/4 cup extra-virgin olive oil
1 small onion, finely diced
1/2 pint cherry tomatoes, finely chopped
8 shredded basil leaves
Freshly ground pepper
Crushed red pepper, to taste
Salt
1/2 pound fusilli or corkscrew pasta (or rotini)
3/4 pound medium (21-30 count) shrimp, deveined, shelled, and washed
1/2 cup white wine

Directions:
In a large saute pan, heat oil over low heat and cook diced onion for about 5 minutes, or until onion is translucent and light brown. Add the tomatoes and 1/4 cup of water. Cook over medium heat for 2 to 3 minutes. Add 1/2 cup shredded basil, the pepper, and the crushed red pepper to taste. Remove from heat, and set aside until you are ready to cook the pasta.

Boil 5 quarts water with 2 tablespoons salt, and cook pasta al dente, following the package directions. At the same time, warm up the sauce on high heat. Add shrimp. When they start to turn pink, add wine and continue cooking for 2 minutes at high heat; then lower flame.

Drain pasta, reserving about a cup of the water. Add pasta to the pan with sauce; toss it, and cook over high heat until tender. Test for seasoning. Tip: If the pasta absorbs all the sauce, add some of the reserved pasta water a tablespoon at a time, until desired consistency.

and then for dessert...

Zuppa di Fragole (Cake with Sweet/tart Strawberries) (for 2)

3 tablespoons freshly squeezed lemon juice
1/2 cup freshly squeezed orange juice
1 tablespoon sugar
1 tablespoon honey
1 pint strawberries, washed, hulled, and thinly sliced
2 slices store-bought pound cake, cut into 1-inch cubes
Few drops of marsala wine

Directions:
In a small bowl, combine the lemon juice, orange juice, sugar, and honey. Tip: If too sweet, add more lemon juice; if too sour, add more sugar. Toss strawberries with the honey mixture.

To serve: Serve in a parfait glass or any other dessert glass. Place a few cubes of the pound cake at bottom of each glass, moisten with marsala, and top with the strawberry slices.

Notes: adjust honey/lemon juice to taste

Since we don't know what's in the fridge or cuppard, it's difficult to make suggestions. But, sometimes a nice salad with a baked potato is a nice light dinner. Dessert can be ice-cream with chocolate syrup. Or, if you have pasta, try that with just parmasean cheese and a salad and dessert. Again, it difficult to suggest without knowing what you have to start with.
