There are LOTS of veg*an restaurants in NYC.

Check out Red Bamboo in the Village (a few items have dairy, but these are clearly marked. It's mostly vegan).

There's also Gobo, which has two locations: One in the Village and one on the Upper East Side (upper 70s, I think).

For a really luxe dining experience, check out Pure Food and Wine, an upscale raw place near Union Square.

There's Blossom, which is on 9th Avenue in Chelsea.

Some people swear by Candle 79, on 79th near Lexington, but something about their food just doesn't sit right with me.

Heck, go to www.happycow.net, and you'll find vegetarian and veg-friendly places anywhere in the world.

Indian restaurants in those cities come with vegetarian alternatives. You can also order salad in fast food restaurants ot veggie burgers. Some Lebanese restaurants will have cous-cous or a vegetarian dish. There are all kinds of options that you can see by finding out what is on the menu.
