There is a place in Anaheim called El Nopal, they have a good variety of mexican food. I think the items you've listed are a different type of mexican food so your not going to find them all in one place. For Carnitas there is a place in Fullerton called Carnitas Uruapan which are very good, and tamales de iguana? I think that's a specialty you'd have to make at home. Sopes can be found in placentia in a place called Q Tortas or El Farolito. You have to look around.

I would go to Mi Concina or Luna de Noche. They are the best and are approved by my mexican friends who have mex atleast 3 times a week at home. So I hope I helped with my two favs.

Well, Baja California Norte or Baja California Sur would be suitable, I think.
