Know any good sandwich ideas that are relatively low calorie, low carb?
Preferably without mushrooms.

I just miss sandwiches, haha.

Falafels are good.

Low cal and low carb. That's a little tougher since sandwich implies on bread.

You can marinade tofu and grill it up.
Grilled eggplant and vegetables.

Well I have a pretty diverse palette I guess you could say, so I engineer some pretty interesting sandwiches. A really good one is peanut butter and banana (Elvis's favorite). I, the curious vegetarian, have tried (and liked): Peanut butter and sweet crunchy pickles Various combinations of spinach, alfalfa, spicy mustard, mushrooms, and miracle whip or mayonnaise (although you may want to check if those are completely vegetarian). Of couse you could make egg sandwiches Miracle Whip/ mayo with avocado, mushrooms, and alfalfa. Miracle whip/ mayo with tomato and eggs (boiled, scrambled, however) and cheese Spinach is awesome!! you could toast the bread and make a spinach and swiss cheese sandwich (and the cheese is all melty and delicious) and even add tomatoes if you want to.

At Superstore (Canadian) you can get this amazing marinated tofu (Teriayki flavour) and it's super firm so it's easy to slice. I like to put a few thin slices of it between two slices of bread with mustard, leaf lettuce, tomatoes, and a slice of soy or rice cheese. It's very yummy. If you are going for low carb, you can buy sprouted grain bread. It looks and taste like a good grain bread but the texture is a little chewier. Personally, I find it a little hard on my tummy, but many people really like it.

I was going to say that I'm in your shoes I usually don't know how to make a good vegetarian sandwich, I usually stick to PB&J and since I eat cheese sometimes a cheese sandwich but that sandwich that Pyewacket suggested sounds delicious!

Sandwich Ideas, I use: ( I reccomend grain bread )

Hummus, Mayonaise/Veganaise, cream cheese/vegan c. cheese, Mustard, or honey mustard for spreads.

Toppings:
Red/Green/Yellow/Orange peppers (sliced)
Cheese/Soy cheese
Sprouts
Cucumbers
Avocado
Red onion/cabbage
Lettuce
Tomato
Piementos
Shredded carrots
Eggplant
Pickles
Olives
Beans
Tofu: Plain, marinated preferably

You also try egg sandwiches, or meatless chicken burgers, or you could have a veggie burger. ♥

Play around with it, you'll find something you like.

Tahini (sesame paste) mixed with a tiny bit of soy sauce, topped with fresh watercress and/or alfalfa sprouts!
Mashed hardboiled free-range egg and cress.
Baked aubergine mashed up with baked whole garlic and sundried tomatoes.
Baguettes hold salad-type fillings better than sliced!
Blow the calories, enjoy your grub and take a brisk walk whenever you can!

Hummus, tomato, and lettuce
Natural peanut butter or raw almond butter with a drizzle of maple syrup on toast
Veggie cold cuts (I like the bologna kind or tofurky) tomato, lettuce, mustard
Veggie bacon, lettuce, tomato

okay, fried tofu is good with avocado and lettuce, bean sprouts, and red onions. also put balsamic viniager and oil on top. mmmm
fblt- fake bacon lettuce tomatoe, get fakin' bacon tempeh if you can find it. its like, the greatest thing i've ever tasted. i love it, then just make a blt with it
you can also get falafel, its in a pita. soooo good. its morrocan. i love it, its just garbonzo beans crushed, spiced and fried with lettuce onions cucumbers and tahini sauce on top. yum. they sell boxes of the dry mis, just add water and fry.

u can make a pb&j sandwhich but u have to make it homemade or go to organic store to actually get it and its yumi
