I am making a R-L of P as a main course and then I was thinking scalloped potatoes and thenfrench green beans?
what would accomany this dish? the pork is going to have an italian flare w/ proscuitto and provolone on it.
so what would be good w/ this food wise (not wine)?
I dont have that natural "chef" gift, so maybe u can give me some ideas?
Also, what pound or ounce pork loin should I get to feed 8 people?

I would go with a 3 1/2-4 pound pork loin. It will usually come two to a package, so you can stuff them like a sandwich with your prosciutto and whatnot, then tie it.

I would go with rosemary roasted potatoes instead of the gratin and Italian green beans or asparagus.

I would pass on the scalloped potatoes this time, due to the cheese on the roast. I think a rice pilaf made with chicken broth and frozen baby peas would make a nice side, along with either your french green beans or asparagus with a butter/lemon sauce. A side salad, too. You will need approx. 4 lbs. to serve 8 generously (hopefully some leftover).

I would suggest a pound of pork per guest. 8 guests = an 8 pound roast.

Side dishes: Since you're going Italian I suggest stuffed artichokes, zucchini fritters, and fettuccini Alfredo.

Top that off with a bakery quality Italian bread and since you specified no wine I suggest you try a chilled sparkling apple cider, which always goes well with pork or ham.

Dessert: cafe espresso and spumoni

I always make curried basmati rice with pork. But even a simple pilaf would round out that dinner. Don't forget a mixed green salad (I suggest a balsamic vinaigrette and feta), and a light dessert.
