A friend of my mother's, from work, makes homemade egg-rolls. She's from Thailand, I believe, and they're done with the wanton wrappers you can purchase at the store.. not very large, most people would probably associate them more with "spring rolls", as far as what you can buy at a typical Asian themed restaurant.

They are delicious, and I believe vegetarian.. the thing is, I'm trying to figure out a healthier way to cook them, other than deep-frying them. That's what my family usually does (I'm not sure if that's how she told them to cook them or not) but I'm trying to use them as kind of a healthy snack. Any suggestions? Can I bake them (and for how long, at what temp?)

Sorry, I should add something: She gives dozens of them to my mother, frozen, as gifts, and my mother shares some with me (as there's no way she can eat that many!) So I'm just trying to figure out a way to cook existing ones! *grin*

light spray of non-flavor pam and grill them but only on a bbq grill with a lid you can close. trust me, delish! but it'll only work on a very clear preoiled grill with pam to keep it non-sticky

Spring rolls aren't deep fried but arent like the good ol egg roll. I know you can lightly spray the rolls with PAM and bake them until crispy. You just have to make sure the filling is hot and not too soupy when rolling them and turn them half way through the baking. The oil spray is key. it will help the browning and crisping. :)

You can make the same thing she does just lightly brush with vegetable oil and bake in a hot oven. They will not get quite as crispy but they will still taste good. And you control the Fat you put on them.

refreezing does not cause bacteria to form. If the meat product was held at the proper temps after thawing and before refreezing, they are fine. What refreezing does is effect the texture of foods. It can make meat mushy, which wouldn't even be an issue with any ground meat.

you can bake them. that is how my mom always does it. just make sure you flip it to get both sides done nicely. you will never go back, the other ones are so greasy.

They taste so much better when fried....jsut drain them well after cooking.
