I'm in the process of becoming a vegetarian too, and luckily I haven't craved meat too much yet. I think the key is not to be too disappointed with yourself when you get a craving and not to expect perfection. So far I've just been searching the net for delicious new veggie recipes and making yummy new foods for myself every night (I've almost converted the rest of family with my food alone! lol).
Anyway, a couple of ideas:
- Have you been getting enough protein and iron? When I haven't been getting enough of them I either crave meat or peanut butter. The site I listed has some great examples of foods.
- Try those fake meats, although they aren't quite like the real thing they're definitely 'meaty.' My favourite so far are the sausages made from soy. I think the key with most of the 'meat' is not to eat it alone, e.g., the 'bacon' definitely needs to be on a sandwich or something.
- Read PETA when you need a little reminder of why you're doing what you're doing.

When you have a craving, try to distract yourself. Do something you love, like listen to music, read a book, watch a movie. Beware of watching tv, because of the commercials.
If you're still having trouble, think about why you don't want to eat meat. Think about your religion, think about how horrible it is that the animals died. Eat some excellent veggie food!

Have you thought of trying some of the vegetarian meat analogues? You can get veggie burgers, veggie sausage, veggie deli slices, veggie crumbles, etc. A German company called Viana makes rally fantastic analogues. You can get them at www.veganessentials.com and www.veganstore.com. You can learn to make your own seitan and use that in meaty recipes. A company called May Wah (www.vegieworld.com) also has numerous analogues.
Try to replace the meat you eat with analogues, and you may find it suits your needs. I think I read once that Buddhists created meat analogues so as to have the taste of meat without the cruelty.

The answer is right there in your question itself. You write, "...the more I think I can not eat meat, the more I want it."
Buddha taught us that when we closely observe our lives, we see that thinking, along with our desires and clinging, produces suffering (the 2nd Noble Truth).
Desire and clinging are part of being human -- all humans experience these states, all of the time. But Buddha taught us that we can gain freedom from desire and clinging (the 4th Noble Truth) and thus end the suffering that our mind produces.
So I hope you'll continue practicing meditation or whatever practices your tradition teaches so that you can clearly perceive your mind habits and cut off suffering.
By the way, Buddha did not teach vegetarianism and many Buddhists eat animal products, at least occasionally. But since eating animal products involves killing, it's worthwhile looking into why you eat them. It's a good question for all of us: "Why do we eat every day?" Good luck!

Well, that's why fake meats were invented, to help those meat eaters to transition. Check out the Chinese and Taiwanese vegan Buddhist foods -- awesome stuff. Lots of western type fake meats like veggie dogs etc, but really they are not as good.
If you are Buddhist, why not try visiting your local Buddhist temple or association etc. and they will show you how to cook for free... they will even have free meals etc. for you to try. Many Buddhist temples have cafeterias inside with all sorts of great foods. There are lots of Taiwanese, Chinese, and Japanese Buddhist temples out there along with lots of cookbooks from the same. Check it out.

I am a vegetarian too. :o) Try to make some easy vegetarian recipes online. They always taste delicious! Also, just try to get out of the habbit of buying food at a restaurant or store. I know it is knda hard to start but just bare with it and soon you wont crave it or anything. :o)

Go on the PETA website and watch how they torture animals just for food!!!! That'll get you to NEVER touch a piece of meat again!!!! While you're at it, check out how they slaughter dolphins while they are still alive!!!!
