i've been a vegetarian for 3 years now. I want to become vegan. what should i start eating more of if im going to be cutting out dairy, ect. what should my diet consist of now? what should i eat throughtout the day?

Well, if you're cutting out cows' milk, you can use soy milk, rice milk, or nut milk.

Instead of ice cream, there are soy ice creams and rice creams. Soy Delicious Purely Decadent will have you smacking yourself and wondering why it took so long for you to dump dairy.

Check the labels on chocolate--a lot of idiotic companies like to put milk products in dark chocolate for some stupid reason. Most conventional brands are off limits, but there is vegan chocolate candy out there!

I'm a bad girl, I know, telling you about all the junk food, but really, if you eat healthy now, dumping dairy, eggs, and bee products shouldn't be so hard--you will just have to read labels far more scrupulously than you have before.

You eat fruits, vegetables, grains, beans, and nuts. Simple as that.

Get yourself a good book on vegan nutrition; this transition is a good excuse to bone up on nutritional requirements. I highly recommend "Becoming Vegan" by Brenda Davis and Vesanto Melina.

Your diet should consist of fruits and veggies, whole grains, nuts and seeds, legumes and soy products. Just make sure you're eating a good variety of whole foods and not relying on too much processed stuff. Pick up a couple of good cookbooks for inspiration. "Vegan with a Vengeance" by Isa Chandra Moskowitz is SO good!

Eat lots of legumes, tofu, and other soy products. Basically, take what you eat now, and find the vegan version. For example, instead of milk, use soy milk. Instead of eggs, use egg substitute.
