If you're set on fried chicken, you can probably save about 30 to 50% by buying whole fryer or loins, cutting them and frying them yourself. It's a pretty simple process, or you can bread them and bake them.
If you're using ground hamburg, get some TVP (textured vegetable protein) and it will stretch out the hamburg much further and nobody would ever know it's there. It's cheaper than meat, if you can find it in your area. You can add equal amounts of TVP into hamburg and you get twice the amount! This is great for things like sloppy joes, meatballs, lasagna, or meatloaf.
You can buy large hams for fairly cheap around Christmas time, which can be sliced up per person. Watch for sales on hams. They're especially great because you can coat them with just mustard and brown sugar, bake them and you're done! Mashed potatos are a great side and a 50lb bag is really cheap, as are big bags of carrots, yams or parsnips.

Chili! I used 1 lb ground hamburger, 1 large can diced tomatoes, 1 can beans w/ jalapenos (I use Ranch brand), 1 large can diced green chili, 1 can chicken broth, and 1 packet of chili seasoning. This feeds about 8-10 people. You can multiply that out for your 100. Grab a bunch of tortilllas (also inexpensive), some onions (you can also cook some of these in with the meat, diced) , cheese and sour cream, and you have a wonderful meal. My family loves it in the winter. Pricewise, I think it costs me approx $11-15 to make my 8-10 people amount, depending on the price of ground beef, but you can get it cheaper in larger amounts at places like Sam's and Costco.

If it's casual, hamburgers and hotdogs. Or even just hot dogs. You can buy huge packages of, like, 36 at Walmart for a just around four dollars each. At that price you probably won't mind springing for chili , chips and all the fixin's, too.

You could always buy chuck roasts and add the dry italian seasoning package. For 100 ppl it will take about 15 roasts and 5-6 packages of seasoning. It makes great italian beef sandwiches. Just buy some fancier buns and there you go. These sandwiches are really tasty and go far. It will cost you around $100-$125. If you need the directions to make it please email me. Go buy a couple of big black forest hams. Bake them up like the instructions say, but you don't have to since they are pre-cooked. However, they do taste better double cooked. Then slice them up and serve on a platter.
If all else fails, tell everyone it's potluck. LOL

Something with a pasta works well and can stretch the budget
A home made meat sauce with lots of vegs over corkscrew pasta is really good tasting and it is really cheap.
