"The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson has a lovely vegan pot roast recipe. You'll have to make your own seitan, and as a veteran seitan-maker, I recommend you not use it in a recipe the day you make it. I use the Arrowhead Mills Vital Wheat Gluten, which you can find in the baking section of most grocery stores.
"La Dolce Vegan" by Sarah Kramer has a recipe called Tomato-Walnut Crusted "Chicken" which uses seitan (the book also has recipes for the simmering broths for your seitan) . With a grain pilaf and some haricot verts, that would be a very lovely meal.

I think lovingly preparing food for someone is romantic in and of itself. Beyond that, take the personal tastes of your loved one into account; making something that you just know the other person will love is also romantic, even if it's simple food. Something a little decadent is always a good (romantic) idea, and make sure there's dessert!
Most of the menus at the back of Isa Chandra Moskowitz's "Veganomicon" would make for a nice special occasion meal. If you don't want to run out and buy a cookbook, you might see if your library has it.

I'm so glad I saw this. I lived in Italy for 2 years and I'm a vegetarian! Something that's really delicious yet so easy is pasta with creamy mozerella cheese and mushrooms. Just cooke the pasta and when it's still hot put the mozerella in (usually comes soaked in olive oil and ball-shaped) and then cut and cook the mushrooms in a little bit of olive oil and throw them into the mix. You can mix it all together and then top it with basil . SOOO good!

This is a great risotto recipe that I think is romantic. You could do a nice soup and salad first, then this.
MUSHROOM RISOTTO
3 tbsp butter
1/4 tsp salt
1/4 tsp black pepper
3 cups sliced mushrooms (any variety)
1 tbsp lemon juice
4 cups stock (McCormick's all-veg "chicken" stock is great)
1/4 cup butter
1/2 cup onions, finely diced
1/4 cup celery stalks and leaves, finely diced
3 cloves garlic, finely chopped
1 tsp dried tarragon
1 cup Arborio rice (sometimes called Risotto rice)
1/2 tsp salt
1 cup dry white wine (or Vermouth)
Black pepper to taste
Grated Parmesan cheese (optional)
1. In a large frying pan melt butter over high heat for 1 minute until sizzling. Add salt, pepper and sliced mushrooms and stir-fry for 5 to 6 minutes until browned. Remove from heat, stir in lemon juice and set aside.
2. Make stock. If using boullion cubes, make sure to use boiling water because you need the stock to be hot for the next step.
3. In a heavy-bottomed pot, melt butter over medium heat for 1 to 2 minutes until it starts to sizzle. Add onions and celery; stir-fry for 5 minutes until softened. Add garlic and tarragon and stir-fry for a minute. Add dry uncooked rice and salt and raise heat to high. Vigorously stir-fry the rice for 4 minutes until it is coated with butter and thoroughly hot.
4. Add wine and stir-cook for about 3 minutes until all the liquid has been absorbed/evaporated and the rice starts to look dry. Reduce heat to medium and add about 1/2 cup of the hot stock. Stir, then wait until the liquid starts to bubble and rise about the rice. Let it cook for another minute and stir. Wait for the liquid to rise again, let cook another minute and stir. Repeat wait-cook-stir cycle until the liquid has been mostly absorbed and the rice begins to appear dry.
5. Add another 1/2 cup of the mushroom stock and repeat the wait-cook-stir cycle until the rice is beautifully cooked (still al dente, but with a very tender interior). You may not need to use all of the stock. The entire process should take about 25 to 35 minutes.
6. Add reserved mushrooms and any pan juices to the rice. Stir and cook for 1 minute. Remove from heat, cover and let it rest for 5 minutes to absorb excess moisture. Sprinkle with black pepper and Parmesan if using. Parmesan is not necessary at all, this is creamy without it, but it adds a nice touch to a special meal.

SO YE burger in a bowel.drain veggies and mixed
in with tomato sauce.make it in to a meatless
meat loaf . serve peaches or pears.baked roll.
or bread,and strawberry preserves, a glass of
red wine,alcoclefree.
