i need to know a suitable sauce to compliment a stuffed trout dish on my christmas menu.

a simple lemon butter sauce

Watercress sauce

100g watercress , roughly chopped
100g tub of low-fat fromage frais
2 tbsp capers , rinsed and chopped
½ lemon , juiced

whizz the watercress with the fromage fraîs in a blender or food processor. Stir in the capers and lemon juice, season. Serve the trout with the watercress sauce.

Gooseberry , when in season, is perfect with Mackerel or Trout.
But for Chrismas I would sugest stuffing it with prawns & a dill sauce.
