Instead of meat just replace it with a veggie like for chicken alfrado just skip the chicken and use broccoli.

I large jar marinara
1 jar baby ear corn
1 bag frozen mixed veggies for soup
1 box frozen spinach
2 cups sauteed onion and bell peppers chopped
1 cup raw almonds
4 chopped garlic cloves
2 tablespoon oregano
1 table spoon basil
1 bay leaf
A pinch of sugar for love. LOL
Put it in the crock pot and let it cook on low for 6 hours. Make the pasta of you choice.
Pretty good stuff.

I'm not vegetarian but my family loves a pasta salad any time of year. I just cook the pasta of my choice and rinse with cold water and drain. Chop veggies of your choice. I add onions, garlic, cucumbers, tomatoes, shredded carrots, celery or celery seed, zucchini, and green peas. I use a variety of dressings. Here's one we all like:
1/2 cup apple cider vinegar
1/2 cup sugar
1/3 cup oil of choice (mine is canola)
black pepper
minced garlic
Shake well and refrigerate.

In the summer I make pesto and freeze it. Then I have that over angel hair pasta with some grated Parmesan. Sometimes I add some shrimp chicken sausage. The pesto at the grocery store is good, too.

Prepare pasta, use spaghetti sauce, and add spinach, paprika and chili powder (if u like spicy food).
If you're not a vegan put on a tablespoon of sour cream. ( I dont anymore, but it was pretty good)
