I want something with the Peanut Sauce. And preferably with chicken.

Thai Peanut Chicken:
INGREDIENTS
2 cups uncooked white rice
4 cups water
3 tablespoons soy sauce
2 tablespoons creamy peanut butter
2 teaspoons white wine vinegar
1/4 teaspoon cayenne pepper
3 tablespoons olive oil
4 skinless, boneless chicken breast halves - cut into thin strips
3 tablespoons chopped garlic
1 1/2 tablespoons chopped fresh ginger root
3/4 cup chopped green onions
2 1/2 cups broccoli florets
1/3 cup unsalted dry-roasted peanuts


DIRECTIONS
Combine the rice and water in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender. In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper. Set aside.
Heat oil in a skillet or wok over high heat. Add chicken, garlic and ginger, and cook, stirring constantly, until chicken is golden on the outside, about 5 minutes.
Reduce heat to medium, and add green onion, broccoli, peanuts, and the peanut butter mixture. Cook, stirring frequently, for 5 minutes, or until broccoli is tender, and chicken is cooked through. Serve over rice.

THAI SOUP - KAEN RON

4 oz pork tenderloin or lean boneless shoulder
1/2 breast of chicken, 4 oz
1 qt. Chicken stock
8 dried mushrooms about 1/4 cup
1/2 cup water
1 large onion, thinly sliced
4 cloves garlic, minced
1 tsp. anchovy paste
2 tsp soy sauce
2-3 oz soy bean threads
4 oz raw shrimp, cleaned
1/2 cups cubed cucumbers
2 eggs
2-3 tbsp. chopped fresh coriander or parsley

The original version of this recipe calls for a fish sauce called Nam Pla. You may be able to obtain this in gourmet specialty shops or by mail order. In this recipe we've substituted anchovy paste and soy sauce, which works well.
Soak the dried mushrooms in water for about 20 minutes prior to cooking. Cut up the chicken and and the pork tenderloin into 1/2 inch cubes. Add the meat to your chicken stock in a soup pot. Bring to a simmer. Thinly slice the soaked mushrooms. Add the mushrooms and water to the soup along with the onions, garlic, anchovy paste, and soy sauce.

Simmer gently until the meat becomes tender approximately 20 minutes - do not allow to boil. At this point, add the raw shrimp, soy bean threads, and cucumber. Continue to simmer until the shrimp are cooked (they will no longer appear translucent).

Stir in the beaten eggs, one after another. When the eggs have coagulated, pour the soup into a serving bowl or soup tureen and serve with steamed rice as a side dish. Garnish with freshly chopped parsley or cilantro

Make masaman gai. You need to buy masaman curry, which has a peanut flavor, from an Asian grocery store. Dice and brown some chicken. Add the chicken to the curry paste with chunks of onion and potatoes and a can of coconut milk. Sprinkle with chopped peanuts. Awesome!

Supatra's Thai Chicken (Gai Yang) Ingredients
2 lb chicken fryer (breast, drumstick, thigh and wing)
1/3 cup Thai oyster sauce
6 cloves garlic (minced)
1 tsp black pepper
1 tbsp Thai soy sauce (Healthy Boy brand is recommended)
1 tbsp sugar
1 tsp sea salt
1/4 cup minced lemon grass (optional)
Preparation

Thoroughly wash the chicken and pat dry with a paper towel. Combine oyster sauce, garlic, black pepper, soy sauce, sugar, salt, and lemon grass (optional) in a bowl. Mix ingredients together thoroughly and apply as a marinade to the chicken. Refrigerate for at least 15-20 minutes (or overnight).

Grill over charcoal at medium-high heat for 30-40 minutes, turning occasionally to prevent burning. (If charcoal fire is not available, roast in 375-degree oven for 30-40 minutes.)

Buy the "Thai Kitchen" green or red curry paste. There is a recipe on the back for making curry. You use the paste, along with coconut milk and fish sauce. YOu can add whatever meat and veggies you would like.

Well I know a good sea food one, not quite what you asked for but would impress your mates...my favourite with a few beers. name is Kung Chai Naam Pla means raw prawn in fish sauce.
Shell prawns (prawns tails only, about the size of your husbands thumbs.
Arange them around the edge of a dinner plate and in the centre pour mixture of fish sauce and lemon, with very little vinegar.
then in the centre have sliced raw garlic slices of chilly.
And whole mint leaves.
ANd it is the best:-) In Thai say 'aroi maak '(delicious very much)
