When a large scale test of escorts etc was done in cities, it found about 67% of them have genital herpes - in the 'normal' population that figure is 25%. So it is more likely than not that your escort will have herpes.
You can't tell she has it. Most of the time the virus is dormant and no symptoms show, and many of those infected will never have symptoms and be completely unaware that they are infected.
Condoms only provide 50% protection, but herpes is dormant for the majority of the time - about 90% of the time when no symptoms show - so the likelihood at any one time is that you are not going to catch it.
Anyway, herpes is not such a big deal. Be careful with giving her oral sex/allowing her to give you unprotected oral sex - almost anything you can catch through unprotected intercourse you can get through unprotected oral sex - in the throat. I actually caught genital herpes through oral sex - my partner has oral herpes (cold sores) which is the way 50% of people catch it.
