I was gonna say 21 shots and a couple of strippers but then I finished reading... I'd say bring all his friends there, have a nice dinner together, maybe watch some videos of him when he was a little kid, play some games that involve the whole group (Have a dance off, play a movie guessing game, etc etc). There's probably plenty more you can do but... that's all I can gather up for now.

karaoke would be a lot of fun... also, does your church have a band or do you or other friends play any instruments?
get a band together and play him the beatles happy birthday song and other oldies/classics, or top 40.. you don't have to be super good @ playing or singing... no matter what you sound like it'd still be really funny and he'll get a kick out of it ;)... my brother and some of his friends did this for another friend's party and the youth group (and their parents..) loved it, it was a blast!! :D

Celebrate with dinner and the DJ is a good idea.
Afterwards, take the group of you and go volunteer somewhere. A friend did that for her 30th b-day. We all went out for dinner and then went and packed food for a local organization. It was fun hanging out with friends and doing something good besides!

Do nothing. If he's really a christian he wouldn't be celebrating his birthday. Jesus didn't and neither did any of the apostles. But on the other hand King Herod (the one who beheaded John the baptiser on HIS birthday and did not worship God) did celebrate in a gruesome way. Also, Pharoh (that did not worship God) that beheaded his cupbearer on his birthday. These stories are in the bible for a reason - they cast a negative light on the celebration of birthdays. Pagan origins - what does light have to do with darkness?

I would say have all his friends he pals with. A catered meal or each one invited brings a dish. Have music he likes, games he enjoys(basketball-if church has gym). Being 21 it is hard to come up with ideas, sorry. For my son we had just family and cake,ice-cream and gifts. Thats it. Hope you are able to come up with something good.

why not meet up at the church and then everyone can go bowling together? or roller skating? like the birthday parties you had when you were a kid.. or just meet at the bowling alley, how suprised would he be if everyone was there waiting for him with balloons and a cake?

Ain't you churchies allowed to do anything, is there any law against nude twister.
