You can buy vegan yogurt, desserts and jellies in individual pots. you can buy fruit stick that are individually wrapped, or packets of dried fruit types. You could try buying small containers ( with screw top lids) and filling them with nuts, raisins, pumpkin seeds, sunflower seeds, fresh fruit in own juice or anything else that takes your fancy. You could make your own burgers at the weekend which freeze great then take one out to defrost the night before? have this with salad, baked tattie or in a bun? Next time you have some spare time really stop and look at everything in the supermarket, take notes . you dont say where you are but you can buy soya slices in just about any flavour from the redwood company..Hope you find something suitable.

Tempeh sandwich. I think tempeh is good sliced thin and fried or grilled up with a bit of olive oil and garlic salt (its also very easy and quick to prepare this way). For a more savory taste (depending what you put in your sandwich), marinade the tempeh in a combination of: shoyu, nutritional yeast, spices, sesame oil, and miso or balsamic vinegar (My husband is a cheeseburger fiend and I used this marinade to make a cruelty free burger that he actually liked). For a lighter tasting sandwich, pile on all your fave veggies. You could make and italian style sandwich with eggplant and sundried tomato, or a greek one with cucumber, olives, and hummus. You could also make a heavier sandwich (using the marinade) and put things like sauerkraut and vegan dressing (for a vegan reuben) or avocado in it.
If using really wet things like tomato, you could always pack it separately and assemble it at work for a really fresh sandwich.
If you have trouble finding vegan bread (I do, at least), then consider using a collard green leaf as the wrap for the sandwich.

I usually bring leftovers for lunch. You could do that. You can bring packaged soups (although some can be high in sodium). You can make all sorts of sandwiches.
I don't have it, but you might want to check the Vegan Lunchbox, based on the blog of the same name.
