Gingerbread Yule Log

3 eggs, separated
1/2 cup molasses
1 tablespoon butter or margarine, melted
1/4 cup sugar
1 cup all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon cloves
1/2 teaspoon ginger
1/2 teaspoon ground cinnamon
1/8 teaspoon salt

1 1/2 cups whipping cream
1/3 cup confectioners' sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon ground cloves

In a mixing bowl, beat yolks on high until thickened, about 3 minutes. Beat in molasses and butter.

In another bowl, beat whites until foamy; gradually add sugar, beating until soft peaks form.

Fold into yolk mixture. Combine dry ingredients; gently fold into egg mixture until well mixed.

Line a greased 15x1Ox1 in. baking pan with waxed paper; grease and flour paper. Spread batter into pan.

Bake at 375F for 9-12 minutes or until cake springs back when lightly touched. Turn onto a linen towel dusted with confectioners' sugar. Peel off paper and roll cake up in towel, starting with short end. Cool on a wire rack

Meanwhile, beat the cream, sugar, cinnamon, vanilla and cloves in a mixing bowl until soft peaks form. Unroll cake; spread with half the filling. Roll up. Spread remaining filling over cake. Sprinkle with cinnamon if desired.

Yield: 10 servings.

i went to a christmas party where this lady made this yummy, absolutly simple little dessert things...
Everyone said they tasted like oreo truffles.... 8>P

1 package of oreos
1 8oz pkg of cream cheese
white chocolate or milk chocolate

place the oreos in a food processor and get them completly chopped up, then add in the cream cheese and combine. Make quarter sized balls of the mixture and dip them in the white or milk chocolate (or whatever else you would like)
(the lady said that she thinks she chopped up the oreos too long in the food processor and the mixture was almost like a dough after she added the cream cheese, BUT we all said that thats what we thought made them taste like truffles, b/c the mixture was a truffle like texture)....

English trifle. Fairly easy, very festive, and can be made to serve a lot of people. If you don't feel like baking, the Black Forest and Carrot cakes at Costco are also good.

I saw a hard candy platter at the grocery store the other day.

Just put some hard candy some disposable Tupperware. (starlight mints, sugar free things diabetics are there also)

haystacks are so good:

1 package butterscotch chips
3/4 cup peanut butter
2 small packages of chow mein noodles
1 cup miniature marshmallows

first you have to melt the marshmellows and butterscotch chips together, then add the penut butter to the bowl, and heat it in the microwave for a small amout of time. then, take it out and add the chow mein noodles. then, if cool enough, make balls/little pieces with it. then you have to let them cool and they are sooooooo good.

x-mas pretzels yummy!

use long thick pretzel rods, melt caramel in a pan, on the side crush peanuts and colorful chocolotae chips, or butterscotch, or any flavor, heath bars crushed, use anything you want, dip 1/2 the pretzel in the hot melted caramel and then roll into your crushed stuff. place on wax paper and cool in the fridge.

pineapple dump cake.
it's easy and delicious.
in a 13x9 pan,
dump a can of crushed pineapple
dump a can of cherry pie filling
pour yellow cake mix to cover cherry and pineapple
dot cake mix with 1 stick of butter (i put slivers of butter to cover cake mix)
bake in oven at 350 for 35-40 minutes
