I'm having a few girlfriends over for a holiday get together this Friday night. What should I make? I am not a very good cook. I am a housewife with all the right tools, just not such a good cook. If not making it myself, then what can I purchase(Costco, carry out etc) and then make a few sides by myself?

Ok, heres what you do. You buy a chicken that is already cooked. You have the person at the store where you buy the chicken cut it up into 8 pieces. You take it home and put it in an aluminum pan with pam spray. You sprinkle on some essence of Emerils seasoning. 10 minutes before your girlfriends come you throw it under the broiler 400 degrees for 10 minutes. At the same time, you buy those uncle bens rice in the microwave bag (2 bags of rice), and throw them in a bowl and microwave them 5 minutes before your friends come. You buy a ceaser salad in the bag with all the stuff included and while you are microwaving the rice you whip up the salad. You can also have a vegetable like canned peas or whatever and microwave them when the rice is done and add a pad of butter. For, appetizers you can have out a vegetable dip and a shrimp cocktail. Shrimp fettucine is super easy! Just buy some medium sized cooked shrimp (deveined and shelled, frozen or fresh), Knorr's fettucine sauce mix (two packets), and some fettucine noodles. Boil about two quarts of water and cook the noodles until they are just soft (a little more than al dente), drain in colander and set aside. Then, make the sauce according to the package (always add extra butter!), then, add your shrimp after the sauce has thickened. If, you are using fresh shrimp then you will have to turn your heat down. With frozen shrimp, you will leave the heat about the same to insure that the sauce won't become cold and start to lump up. Stir for about 7 minutes until shrimp are tender (don't over cook or shrimp will get rubbery) and then toss your pasta in and mix together. Serve it with some bread (the french bread that is baked daily in any grocery store), a green salad and some good wine.

This is my go to recipe for entertaining.

Boneless skinless chicken breast (1 breast per person)
1 can cranberry sauce
1 bottle catalina dressing
1 pkg. lipton onion soup mix

Combine last three ingredients in mixing bowl
Place chicken in cassarole dish and cover with mixture
Bake @ 350 for one hour or until chicken juices run clear.
This is so easy and looks very elegant.

Try serving with sweet potato fries
Slice 3-4 sweet potatoes lengthwise and place on cookie sheet in an even layer.
Drizzle with honey and grated ginger.
Bake with chicken until fries are soft

Add a caesar salad and you have yourself a meal!

Spaghetti - Get about a pound of noodles, 3 jars of what ever sauce you like, cook up some italian ground pork and ground beef, throw that into the sauce.
Bag Salad - have a couple of different kinds.
Garlic Bread - go to the frozen food section they have these in the freezer, you only have to toss it into the oven.
Good Wine.

chicken alfredo. 1 box of fettuccini noodles. 2 jars of Ragu alfredo sauce. I 4-count package of chicken breatst. 1 french loaf of bread. olive oil spray. jar of italian seasoning.
Boil noodles.
Spray chicken breast with olive oil and sprinkle with italian seasoning.
Bake chicken on cookie sheet for 20 minutes in 350 degree preheated oven.
drain noodles. add alfredo sauce set aside.
When chicken is done, take it out and let it cool abit. Slice bread into 2 in slices. spray with olive oil and sprinkle(lightly) with seasoning. Toast in oven til light golden. Dice chicken and place on top of noodle and sauce. Arrange food on plates and serve! Add a nice bottle of wine ( white to go with meal) and you've got a nice dinner for four!

I made these for dinner one night and me and my husband almost died they were so good! (even good the next day reheated so make extra!) Its a favorite of ours now!
