I just had Polenta with eggs for lunch and I was wondering... Does Polenta have any redeeming value other than being filling and tasty? I also wouldn't mind getting serving suggestions. Thanks all.

It's relatively nutritious (it has significant amounts of starches, fats, and carotenes, which are converted by the body into Vitamin A).

They make a buckwheat polenta which is much healthier.

Bem a polenta e bom para comer no frio. Assim esquenta o estomago alem de matar a fome, talvez pudessemos trocar algumas "receitas de polenta" qualquer dia destes.

I love it too. It's a serving of grains for the day, low in fat, good in carbs, and has folic acid and thiamin along with some other vitamins. I really like it when it's chilled, cut up, and fried a little.

It's high fiber and it is a whole grain, so it is much better than you think. I like to cut it into little slices, like mini pizzas, and bake them and then eat them slightly crisp and browned, like very thick little chips.
