I have my ps3 connected with a hdmi for video and av for sound. Now I got my ps3 directly connected to my surround sound using my av cables (which was included with the console) Now do I get better sound using my hdmi or better sound using my av.

It depends on your sound system.

If your sound system is able to recieve digital Sound (e.g with an optical Toslink or a coax SPDIF cable with an additional optical to coax adaptor), then you're better off connecting the PS3 directly via this cable to your surround set. Only this way you will get digital surround sound.

Using the AV cable from the PS3 will only give you Stereo (maybe depending on your sound system, this Stereo signal can be upmixed to the rear surround speakers, but it will still be only Stero).

And finally for the HDMI connection, it's relevant, what your TV can do.
If your TV has a digital pass through to your surround sound reciever, then you will get the same digital experience as with the direct digital connection mentioned above.

If your TV only offers an analogue output, then you will get the same stereo sound you currently have.

In conclusion: the best way to connect your sound system, is via a digital cable, or (if your surround system is able to do this) HDMI, with a HDMI passthrough to your TV.
Otherwise stick to the HDMI for video to the TV and the digital cable to your surround set.

If all else fails, keep the stereo sound you currently have.

I suppose that your TV connected to sound system via regular cables? Than it's almost the same, may be a little better (but it depends on the quality of bypass system of your TV). The best way is to plug your PS3 to sound system via DIGITAL OUT jack (if your sound system supports it).
