A menorah with 7 holders was the one used in the temple.
Today we use a menorah with 9 holders to commemorate the miracle of hanukkah.

A menorah with 9 holders is for use on Hanakkuh and is called a Hanukkiah. The ones with 7 holders are for other worship services.

The nine branched one is more correctly a Hannukiah, and is used for Hannukah. (Eight candles, one for each night of the holiday, plus the ninth, the "shamash", which is not blessed and is used to light the others.)
The seven-branched one is the Menorah, with one candle for each day of Creation. It is used for Shabbat, the Sabbath.
