Sugars breaking down. A similar thing happens with honey.

Sugar seperated. Scrape it off, I've heard to stick it the microwave and mix it up again. My honey did that too. You should keep it in the freezer or frig for longer freshness. I've had syrup 3 years and still tastes great & I bake with it, nothing wrong with it,. Unless you have a maple syrup that staes 10% pure maple then you have a 1/2 maple & 1/2 corn syrup product. The pure is very expensive.

the syrup is fine. the white stuff is fat. did you ever put soup in the fridge and the next morning all the fat is on top and solid? same sort of thing.

stick it in the microwave for a few seconds and it will be fine. Syrup does not have to be stored in fridge.
