It was custom of the day.
The victor in combat was entitled to the spoils of his enemy. If you read any of the battle accounts of the Old Testament you will see that the victor always carried off the booty (loot) of the enemy.

We don't know what David did with this later. He probably sold it. It would have probably fitted King Saul (head and shoulders above the rest of Israel at his coronation) he was a big man and, as king, should have faced Goliath, himself. Saul was missing one ingredient - the anointing, David had this by this time.

1. Goliath trusts in his armor. David trusts in his God.
2. Goliath’s covering is fear (hate). David’s covering is faith (love).
3. Goliath’s covering is carnal (fleshly, visible – of the world). David’s covering is spiritual (invisible).
4. Goliath’s universe is centered (focused) on himself. David’s universe is centered (focused) on God.
5. Goliath’s hedge of protection is his dead armor. David’s hedge of protection is the living Word of God.
6. Goliath’s brass armor manifests that he is proud of his sin. David’s lack of armor manifests his humility.
Overall - the armor was a constant reminder of how God worked great things with David who trusted in the Lord rather than in armor made of bronze. David kept the armor to remind him of God's greatness.

Why not? Does it really matter?
But to answer it, a lot of times you kept it as a trophy and to add to your treasury. You have to imagine it wasn't cheap.
