i have to use all of my buttermilk up before it goes bad but i don't know which recipe to use....

please help me...

It has a blueberry topping as part of the recipe but just skip that part since it's not part of the pancake recipe. I have done several of Emeril's recipes and have found that they are ALL very well thought out and accurate. There are many good reviews as well.

They are both very good recipes. The first one is definitely going to make serious, thick and fluffy pancakes.
The food network recipe is a lighter recipe and designed to be a much thinner pancake -- more to be made in crepe form.
Honestly, they both sound amazing and will taste very delicous. The first recipe will be very flavourful. The second recipe is very versatile.
I don't know how much buttermilk you have...but if you have enough, why don't you make a batch of each! That way you can layer each pancake with wax/parchment paper, freeze, and thaw whatever you feel like on any given day...and you've got variety.
Something I do and it's great!

I know this answer is "outside the box" but when I have leftover something that I don't want to go bad - I measure it out - in the case of buttermilk - I'd put it in my ice cube tray and freeze it. Once it's frozen, I'd remove it to a zip lock bag and pull out however many cubes I need at a later date to make something that calls for buttermilk.

make the ones from Cooking.com - they look more complex, therefor more interesting

Its my experience that commercial buttermilk (like sour cream) lasts WAY longer than its expiration date! So dont be too hasty.

The second one....the first recipe calls for 2 cups of sour cream....why would you add all that unnecessary fat and calories to make pancakes...go with the second one.

I would use the recipe from FoodNetwork. I have used it and it is easy to make and the pancakes are delicious.
