You can buy pretty much buy any cake mix (devil's food, spice, etc) and make cookies from it.
Just add 1/2 cup of oil and 2 eggs. Bake on greased sheet at 350F and wowza they are the best cookies you've ever eaten.
Add nuts, dried fruit, grated zest, chocolate, toffee bits, whatever you want to embellish it.
That's what I do whenever I'm obligated to bring a dessert to someone's house because I'm too tied up with more elaborate recipes.

****Christmas Cutout Sugar Cookies
4 cups sifted all-purpose flour
2 teaspoons baking powder
1 1/2 cups sugar
2 eggs
3/4 cup butter (1 1/2 sticks)
2 teaspoons vanilla extract
Colored Icing, recipe follows
Preheat oven to 350 degrees F.
In a bowl, stir together flour and baking powder. In another bowl, beat butter with sugar until fluffy and light. Beat in eggs and vanilla. Stir in flour mixture, a third at a time to make a stiff dough. Divide dough into 4 pieces. Roll out a portion of cookie dough to 1/4 inch thick. Cut out shapes using cookie cutters. Place on lightly greased or nonstick cookie sheets. Bake until lightly golden, about 10 minute, rotating baking sheet halfway through cooking time. Cool completely on pans about 5 minutes, transfer to cooling racks and cool completely before decorating.
Colored Icing:
1/2 cup confectioners’ sugar
1 1/2 tablespoons water
3 to 4 drops food coloring, plus more as needed
Colored sprinkles, optional
In a small bowl, mix sugar and water to form a thick, smooth icing. Stir in food coloring to reach desired shade. Drop icing onto cookies using a small teaspoon and smooth with the back of the spoon. Make additional bowls for additional colors.
Additional multi-colored sprinkles can be added on top of icing before it dries for more decorative cookies, if desired.

BUTTERSCOTCH COCONUT COOKIES Yield: 4 dozen cookies 1 1/3 cups all purpose flour ½ tsp baking powder ½ tsp baking soda ½ cup unsalted butter, at room temperature ½ cup granulated sugar ½ cup firmly packed brown sugar 1 large egg ½ tsp vanilla extract 1 ¾ cups sweetened shredded dried coconut 1 ½ cups butterscotch chips Preheat the oven to 325 degrees. Have ready 2 baking sheets lined with parchment paper. Sift the flour, baking powder, baking soda, and salt together onto a sheet of waxed paper; set aside. In a large bowl, using an electric mixer on high speed, cream the butter until fluffy and pale yellow. Add the granulated and brown sugars and continue beating until the mixture is no longer gritty when rubbed between your finger and thumb. Add the egg and vanilla and beat on low speed until blended, occasionally stopping the mixer and scraping down the sides of the bowl with a rubber spatula as needed. Add the flour mixture to the butter mixture and mix on low speed or stir with a wooden spoon just until blended. Add the coconut and butterscotch chips, mixing or stirring just until blended. With dampened hands, shape the dough into 1-inch balls or drop by rounded tablespoons onto the prepared baking sheets, spacing the cookies about 2 inches apart. Bake the cookies until golden brown around the edges, about 15 minutes. Let the cookies cool briefly on the pans on wire racks before transferring them to the racks to cool completely.

1 1/4 packages of Nabisco graham crackers (not the whole box)
1 can sweetened condensed milk
1 1/2 cups chocolate chips
Break the graham crackers into crumbs . Add sweetened condensed milk and chocolate chips. Pour into a buttered, small oblong or 9x9 square pan. Bake for 30 minutes @ 350 degrees.
Angenets....
1 cup butter
1 1/2 cups sugar
4 eggs (beat well)
6 cups flour
6 teaspoons baking powder
1 teaspoon baking soda
1 small can frozen orange juice
Cream together butter and sugar. Add remaining ingredients. Mix well. Chill 10 minutes. Roll into approximately 80 medium balls on greased pans. Bake at 375 degrees for 8-12 minutes. Do not over bake. Frost with a mixture of powdered sugar, orange extract and milk or cream. Sprinkle with decorative sprinkles.
1 cup butter or margarine
1 cup powdered sugar
1 egg
2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon salt
1/2 cup finely crushed candy cane mixed with 1/2 cup sugar
1/2 teaspoon red food coloring
Mix all ingredients. Split dough into equal portions. Color one portion of the dough red. Refrigerate the dough long enough to be able to easily work with it. Break off one piece (approx. one teaspoon of each color) and roll by hand into four to five inch tubes. Twist the two pieces together and bend forming a candy cane. Sprinkle the top with the candy cane/sugar mixture. Be careful when removing from the cookie sheet, they will break easily. Bake at 350 degrees for 6-9 minutes.
Brown Sugar Shortbread
2 cups butter
1 cup brown sugar
1/4 teaspoon salt
4 cups of flour
Bring butter to room temperature. Preheat oven to 300 degrees. Cream the butter until it is the consistency of whipped cream. Beat in sugar. Add salt. Add flour in 4 portions (one cup at a time) mixing well after each addition. Turn out onto a floured board and pat or roll to 1/4 to 1/2 inch thick. Cut into shape desired with cookie cutter. Place on an ungreased cookies sheet and bake for about 20 minutes or until lightly browned. Keep your on eye on them, shortbread burns really fast.

CANDY CANE COOKIES
1 c. sugar
1 c. butter, softened
1/2 c. milk
1 egg
1 tsp. vanilla
1 tsp. peppermint extract
3 1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. red food coloring
TOPPING:
2 tbsp. crushed peppermint candy
2 tbsp. sugar
Mix sugar, butter, milk, egg, vanilla and peppermint extract. Stir in flour, baking powder and salt. Divide dough into halves. Tint 1 half with food color. Cover and refrigerate at least 4 hours.
Preheat oven to 375 degrees. Take 1 teaspoon dough from each half and shape each into 4 inch rope by rolling back and forth on floured surface. Place 1 red and 1 white rope side by side; press together lightly and twist. Place on ungreased cookie sheet, curving down top of cookie to form handle of cane. Bake for 9 minutes and immediately sprinkle with topping mixture.
