You would want to use a flavorless oil like safflower or canola. Good olive oil has a strong flavor that would be wasted on your brownies. I do know, however, that Greek and Italian cooks (and I suppose other Mediterraneans) use olive oil in making sweets.
But my best advice is to use a good quality neutral tasting oil.

Use a light vegatable oil (safflower, or canola), or Pam cooking spray. Olive oil is too heavy and will add a strange taste.

i usually just use the spray stuff, like pam.
but you can use butter, or crisco. don't use vegetable or olive oil.
