If you are in first year bio, then you are referring to this property of water: Water resists temperature change.
This property makes lakes and other bodies of water have a more even temperature than the surrounding air. The water cools off more slowly in the evening and it warms up more slowly during the day. So the organisms living in the water have a more stable environment.

The ability to absorb heat and evaporate in thin layers,cooling whatever surface it touches.Water is one of the first substances to come to a boil and amoung the first to freeze.Human's use Surface Evaporation (Sweat) to cover the skin,as air passes over it it lowers the tempurature.
