This recipe was on a scrap of brown paper that I found going through my Grandmother's things after she died. I don't know where the recipe originated from. I make it every year during the holidays to give as gifts, and people actually expect it now! Happy Holidays!
ALOHA LOAF
1/2 cup margerine
1 cup sugar
2 large eggs
1 large banna (mashed)
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 (8-ounce) can crushed pineapple
1/2 cup coconut (shredded)
Preheat oven to 350 degrees. Grease and flour a 9" x 5" x 3" loaf pan; set aside. Cream margerine and sugar with electric mixer until light and fluffy. Add eggs and mix well. Stir in banana. In another bowl, combine flour, baking powder, baking soda and salt. Stir into creamed mixture; mix well. Fold in pineapple, with juice, and coconut. Pour into prepared pan. Bake 1 hour and 10 minutes, or until loaf tests done. Let stand ten minutes. Remove from pan to cool.
