How long does roux last in the refrigerator?

It depends on how you store it. In the refrigerator I think it will keep for several days. In the freezer, indefinitely.

When I make roux, I usually make extra so I will have some for the next time. That is if we are talking about the New Orleans type of dark roux that you would use to make gumbo.

If it is a light roux, I probably wouldn't bother to keep it long. It doesn't take long to make, really. The dark one takes quite a bit longer and requires your undivided attention.

lighter roux lasts longer than dark rouxs in general i would use it up within two weeks or the fat might start to go rancid

it doesnt save well. if you dont use it right away just throw it out.
