You sure can.......I do it all the time........you can leave it alone, or add water, just make sure the volume of liquid is equal to the total required in the recipe....Enjoy!!!

Sure you can! Evaporated milk has a distinct flavor and thickness to it, but if you don't have it, regular milk will be fine but you may have to thicken it a bit with some roux (equal parts flour/butter, slowly sauteed and whisked together) until a light golden brown. Heavy Cream is a great substitute or even half and half, but regular milk will do fine, just thicken and season according to your preferences! Yes, you can use evaporated milk in place of regular milk in your cooking but not the other way around - you do not have to add water but if you do, just use equal amounts of evaporated milk and water.
