Right click the My Computer and then select the Properties.
Go to Advanced tab and then click the Settings button under Startup and Recovery frame.
You should see Edit button at the bottom of "# seconds", 30 is the default number. You can edit the boot.ini by pressing the Edit button.
From there, you can change the delay of time you can choose an OS. You can also remove the choices and let it boot straight to the default OS.

There is a file on the root (main directory) of the C drive called boot.ini. It is a text file which contains the information for the menu. You would need to delete the line in the file which refers to the XP partition.

Note: if you make a mistake editing this file, you can prevent your computer from booting.

I can't rightly remember the Win 2000 way, but it might be the following...
Control Panel > System > Advanced Tab > and choose the Start up & Recovery settings.
