I love to different things, depending on the party. You can do a nice crudite platter with blanched asparagus and snow peas, crisp radishes and endive leaves, slices of colored bell peppers...those are all really great and just serve with your favorite dip. (I like doing mine with fresh herbs, minced garlic, low fat mayo and low fat sour cream)
Sushi rolls are another favorite of mine - if you don't want to make them, you can always buy them!
Bowls of steamed and salted edamame always go over well.
Pita chips and garlicky hummus is great, or make a fresh salsa.
Cold pasta salad done with basil or arugula pesto.
Thin crust pizza's or bread slices with fresh tomato's, basil, low fat cheese, and red onion. (yum!)

This is pretty healthy, but I am not sure how low cal it is.
Slice up an English cuke in about 1/2" slices on the bias. Spread with about 1/2 tsp. of alouette (or any herbed cheese) and top with a small piece of smoked salmon. It's really good, easy and simple.
This is also pretty healthy and easy. 1 lb of crab (I generally use 1/2 each the lump and the regular), 1/2 finely diced red onion, about 1/2 finely diced peeled deseeded cuke, 2 tbsp. fresh chopped basil and mint, the juice of one lemon and about 1/4 c. olive oil. Season with salt and pepper. Serve in endive leaves. It's so light and delish.

This can be served with whatever "dippers" you desire.. melba toast, veg's, pita, etc., keeping it all lower in calories/fat.
Baked Artichoke Dip
2 14 ounce cans artichoke hearts, drained and chopped
¾ cup grated parmesan cheese
¾ cup fat free or lite mayonnaise
1 T fresh lemon juice
1 t garlic salt
½ t ground black pepper
Pita bread or crackers, for serving
In a large bowl combine all ingredients except the bread or crackers. Spoon the mixture into a baking dish suitable for serving.
Bake at 375 degrees for about 20 minutes, or until the top is golden brown. Serve with slices of pita bread or whole wheat crackers

4 AVACADOS DICED
1/2 CUP LIME JUICE
1 CAN CORN DRAINED
1 CAN BLACK BEANS DRAINED
1 TSP PICKLED JALEPENOS CHOPPED
1/4 CUP CILANTRO CHOPPED
COMBINE ALL INGREDIENTS
PU THE LIME JUICE ON THE AVACADOS IMMEDIATELY TO KEEP THEM FROM TURNING BROWN
CHILL FOR 2 -3 HOURS BEFORE SERVING
SERVE WITH TORTILLA CHIPS!!!
