I learned that the quran is considered to be the holiest book on earth, the very handwriting of God Himself and that the quran is the most important book of all. Well, what purpose do the hadiths serve in islam?

Hadeeth means "statments". It is a collection of statements made by the Prophet Muhammad (PBUH) and this is transmitted by a number of companions. Hadeeth has an important role itself in describing religious obligatory deeds for Muslims. It gave an explanation of how things should be done and often it is related to Quranic verses, in a way that it explains how a situation should be tackled (practical issue) . But, one should note, some of these statements are not reliable ..so called fake vs authentic hadeeths. I would take that Hadeeth is situational, while Quran is the principle. Some Muslims are completely against hadeeth, since they said it is a deviation, as Muslims had taken it as a primary source, instead of the Quran itself.
The Quran has claimed itself as the best hadeeth and it should not be forsaken.

25.30 And the Apostle cried out: O my Lord! surely my people have treated this Quran as a forsaken thing.

39:23 GOD has revealed herein the best Hadith; a book that is consistent, and points out both ways (to Heaven and Hell). The skins of those who reverence their Lord cringe therefrom, then their skins and their hearts soften up for GOD's message. Such is GOD's guidance; He bestows it upon whoever wills (to be guided). As for those sent astray by GOD, nothing can guide them

p.s the Quran is not the "handwriting" of God. It is an inspiration, rendered in Arabic for mankind, and it was revealed through Prophet Muhammad (pbuh)

They're important because they give us an idea of how Prophet Muhammad (pbuh) lived his life, but they're not in any way equal to the Holy Quran, and anything in the Hadith which contradicts the Quran has to be rejected as false.
