I am on a tight budget and a time crunch. Do you know of any good recipes that I could use precooked rottisery chickens. Thank you

First, they are delicious eaten fresh. If you have leftovers, especially the white meat; make a stove top dish by adding a can of chicken broth, a cup of orzo, choice of vegetable ( spinach, broccoli, brussel sprouts) cover and simmer for about 15 -20 minutes until orzo is edible and vegetables done, add leftover chicken until it is heated through. Should make at least four servings. Have only done this with the white meat.

**********CHICKEN AND RICE CASSEROLE
2-3 c. cooked chicken, skinned and boned, cubed or cut into pieces
1 box chicken Rice-A-Roni, cooked according to pkg. instructions
1 c. fresh Parmesan cheese
1 c. sour cream
Mix all together and cook for 30 minutes at 350 degrees in a greased, uncovered casserole dish.

*******CHICKEN DORITO SURPRISE
1 bag Doritos
1 (16 oz.) Cheddar cheese, grated
4-5 boneless chicken breasts, cooked
1 can cream of chicken soup
1 can diced Rotel tomatoes
Combine in food processor: Cream of chicken soup, Rotel, 2/3 cup grated cheese and chicken. Line cake pan with layer of Doritos, then spread mixture on top of Doritos. Layer with Doritos again and top with cheese.
Cover and bake for 30 minutes at 350 degrees. Then uncover and bake for 10 minutes more. Serve with guacamole and sour cream.

My husband like for me to make chicken salad with them, also I have boiled some egg noodles and chunked up the chicken and added it to the noodles.
