I always use this recipe.. it's rather long but it's just the best I've ever used:
BEST MEATLOAF
BASIC MIX:
1 1/2 pounds ground beef
1 c. fresh Italian style bread crumbs
1/4 cup fresh parsley, chopped
3-4 cloves garlic, finely minced
1 large onion, finely chopped
1 large green bell pepper, chopped
1 egg
1 1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
1 8 oz can tomato sauce
1 cup ketchup
1/2 cup water or beef stock (can use bouillon)
3 tbsp. Balsamic vinegar
3 tbsp. brown sugar
2 tbsp. Dijon mustard
2 tsp. Worcestershire sauce
1/4 c. Parmesan, grated (optional)
In a small bowl, combine tomato sauce, ketchup, Balsamic vinegar, brown sugar, Dijon mustard, Worcestershire sauce, and water/beef stock.
In a large bowl, combine beef, bread crumbs, onions, green bell pepper, parsley, chopped garlic, egg, seasonings, 3/4 cup of tomato mixture, and optionally, Parmesan cheese.
Form into loaf. Place into shallow 7 by 10 in. pan or bread loaf tin, lightly oiled. Pour remaining liquid over meat loaf to coat. Bake in a 350 degrees Fahrenheit oven for one hour and 15 minutes, basting occasionally with ketchup or your favorite barbecue sauce.
Optional Variations:
Choose one:
1. Eliminate salt, bouillon, and substitute 3 tablespoon onion soup mix. Sprinkle top with tomato soup and crushed crackers instead.
2. Use old-fashioned rolled oats instead of bread crumbs.
3. If you have leftover bread, especially Italian or French bread, substitute milk for the water listed in recipe, and soak about 2 cups bread in the milk prior to mixing into the meat mixture. Squeeze out the excess slightly before adding. Substitute this bread for the bread crumbs. After mixing everything together, you can also form this meat mixture into meatballs and fry in 1/2 inch olive oil in a heavy bottom skillet (such as cast iron). If making Italian meatballs, leave out the brown sugar and Dijon mustard, but be sure to use the Parmesan cheese. Season the oil in the pan with 2-3 whole cloves garlic (don't chop it up or it will burn instead of just roasting).
4. If you're in a hurry, you may use as a substitute 2 cups of barbecue sauce and eliminate the following ingredients:
1 c. ketchup
1 8 oz can tomato sauce
3 tbsp. balsamic vinegar
3 tbsp. of brown sugar
2 tbsp. Dijon mustard
2 tsp. Worcestershire sauce
5. Eliminate the sauté crumbs. Sauté this mixture with onion and garlic for 5 minutes and layer a casserole with no-cook lasagna noodles. Place meat mixture to cover noodles. Add a sprinkling of Parmesan cheese and:
1/3 pound ricotta mixed with one egg
1/4 c. freshly chopped Italian parsley or 1 c. fresh spinach
1/2 pound grated mozzarella cheese
Cover with another layer of noodles, and top with 1 large can of tomato sauce mixed with 1/2 teaspoon each basil and oregano. Place in 325 degree oven 60 minutes or until bubbly, basting occasionally with sauce to prevent lasagna from drying out.
6. Form meat mixture into large doughnut shapes, approximately 6-7 inches across. When forming the doughnut, don't allow the center to actually become a doughnut hole; just thin it out, leaving a well in the center. Optionally, brush with ketchup. Crush 8-10 Saltine or Ritz crackers into crumbs and sprinkle over the doughnut shaped burger, concentrating the excess crumbs into the center. Sprinkle with onion and garlic powder and a liberal dose of soy sauce, allowing a 1/2 spoon or so to form in the well. This can optionally be topped with cheese and canned mushrooms if desired. Place in microwave and cook on high for 3 minutes or so, according to size, until the juices run clear and meat doughnut is done. Served with meat drippings as topping, there is no need for a bun. This is a fast and easy low-carb lunch!
7. Place 3-4 strips of bacon lengthwise along the top of the meatloaf. Garnish with rings of green or red bell pepper and bake as usual. 8. Use your imagination, get creative, and enjoy!

1 - 1 1/2lb. of good ground beef...as lean as possible.
1 - 1 1/2lb. of ground pork
1 large egg, beat with a very small amount of water..2 tbs.
1 cup Italian bread crumbs
Mix all ingredients together; form a loaf; place in cooking pan and cook for 75 - 90 minutes at 350 degrees, depending on how well you want it.
You can add a number of different things to it, depending on your mood: a cup of ketchup; a cup of BBQ sauce; 2/3 of a can of Campbells cheddar cheese soup (straight from the can...do not dilute), put the balance on top when you're about 20 minutes from being finished cooking; an envelope of Lipton's onion soup mix; a cup of A-1 Steak Sauce (and A-1 comes in a number of different flavors that can make a big difference on your finial outcome; a cup of Heinz 57 Steak Sauce; or try some other canned soup that you like.
When I add sauce to the top, I always do it around 20 minutes from it finishing...don't want to burn it. Another flavor idea: cut up a medium size onion in large slices and place on the bottom of the pan and place the meatloaf on top...it really moves the flavor into the meat much better than when you just put onion slices on top!

Meatloaf is one of my favorite recipes - served with mashed potatoes and whole green beans or steamed baby carrots.
Meatloaf
3 pounds lean ground beef
3 large eggs
1/2 to 3/4 cup Italian style bread crumbs
1 packet Lipton's Onion or Beefy Onion Soup Mix
1 can sliced mushrooms - drained
1/2 cup sliced black olives
2 tablespoons BBQ sauce
1 tablespoon A-1 sauce
1/2 cup salsa
1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand
Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

"Turkey Meatloaf
2 lbs. ground Turkey
2 Eggs, slightly beaten
1 med. Onion,chopped
2-3 ribs Celery,chopped
1 med. green or red Bell Pepper,chopped
1 cup Oats, quick or old fashioned
1- 10 oz. can mild Rotel Tomatoes,diced
1 cup Marinara Sauce,your choice
1 tsp. Salt
1/2 tsp. Black Pepper
1.Preheat oven to 350*& spray a 2 qt. baking dish
with non-stick cooking spray.
2.Mix all ingredients together(except 1/2c Marinara
in a large bowl.
3.Press meat mixture into baking dish.
4.Bake for 45 mins. then spread remaining marinara sauce on top & cook an additional 15 mins.

Here's how I make it but I don't have a recipe so it turns out different every time.
2 pounds of ground beef.
1/2 cup ketchup or tomato sauce.
some chopped onion if you want it.
1/2 cup oatmeal.
2 eggs.
Some dried parsley and garlic.
Mix it all up and put it in a baking pan and bake till done, about an hour. Stick a meat theremometer in it to make sure.
My mom sometimes made it without the kechup and used a can of cream soup like tomato or mushroom and it turned out great too. And I have used salsa instead of ketchup.

*******Long Time Family Meatloaf Recipe
1 lb. ground beef
1 egg
1 pkg. crackers, crushed or 1 c. bread crumbs, plain or flavored
1 med. onion, chopped
1 med. green pepper, chopped
1/2 c. chopped celery
1 med. apple or pear, chopped
1 tsp. pepper, black or red
1 tsp. low sodium salt
Ketchup or barbecue sauce
Your favorite cheese
3 slices bacon (optional)
Place all of the ingredients in a large bowl, except for the bacon. Now, here comes to fun part. Pretend you're a little kid again and squish everything together. It fells real gooey between your fingers. After you have had enough fun place half the mixture in a small rectangular baking dish. Place the slices of cheese on to the mixture and then place the rest of the mixture on top of the cheese.
If you choose you can place the bacon on top of the meatloaf. Preheat the oven to 350 degrees. Place the mixture in the oven and bake for about 1 hour.
Remove from oven and allow to cool for a couple of minutes.
***********STUFFED MEATLOAF
2 lbs. ground beef
Beef Stove Top stuffing mix
1/2 c. finely chopped green pepper
1/2 c. celery, chopped
1 med. onion, chopped
1/2 tsp. garlic salt
1 tsp. salt
1/2 c. grated carrots, optional
2 eggs, beaten
3/4 c. bread crumbs
Prepare Stove Top stuffing according to box directions; set aside. Crumble ground beef in large mixing bowl; add all other ingredients except stuffing. Mix well using hands.
Place on sheet of foil big enough to wrap meatloaf for baking. Flatten meat mixture out; add stuffing mix on top. Using edge of foil nearest you, begin to roll meat mixture and press together all edges. Now completely wrap loaf with foil. Place in baking dish. Bake at 350 degrees for 2 hours. Remove from oven; let stand 5 minutes before serving.

Use cream of wheat to mix with the ground beef. Also, use about a half cup of "Chili Sauce." Heinz makes "Chili Sauce" that is sold just like ketchup. I add an envelope of onion soup mix and an egg. Easy as can be. Everyone loves it.

Just to save time, I threw in a can of manwhich sauce one night.
Everybody raved about it, and it was easy.
Use leaner meat, or half turkey or chicken, and cut the bread crumbs.
