We have a couple of favorites at our house. One is to cut into strips about 1 inch wide, thread on skewers, coat lightly with olive oil and season with either a seasoning or just light salt and pepper. Then grill for about 10 minutes, turning every two minutes or so until done. Then serve on top of a nice salad.
A second favorite is to do the olive oil and seasoning, then grill over a direct medium fire on a covered grill. For grilling times we use the cookout calculator at charcoalbob.com. Enter the thickness of each boneless chicken breast at its thickest part and it will give you instructions for when to put on and turn each so that they all come off the grill at the same time, grilled nice and juicy.
Then we put a little of our favorite bbq sauce in a dish to use as a dipping sauce. It's a nice, spicy variation for boneless chicken breasts.

Cut the chicken into cubes. Season with salt and pepper.
Chop up 2 cloves of garlic and 1 small red bell pepper.
Heat 2 tablespoons of olive oil in a saute pan on medium heat.
Saute garlic and peppers until soft.
Add chicken and cook until no longer pink.
I like to add some cooked white rice to the pan after I cook the chicken and brown it then put the chicken on top.
Quick, easy, simple, good. Enjoy!

Put the chicken in a baking dish, pour a can of cream of potato over it, cover with foil, bake it in the over for 1 hour at 350. Serve with wild grain and white rice, Uncle Ben's has that in one of those 90 second rice bags. Serve with rolls if you like!

Well you can put it in a casserole dish with cream of chicken soup peppered and seasoned salt to taste and bake at 425 for like an hour covered this makes a good chicken gravy to put over potatoes or rice even
You can also dip them in an egg and milk mixture and roll them in bread crumbs put on a baking sheet and bake
I like the first recipe the most tho and if you perfer cream of mushroom soup its good also
If you don't like those smother them in your fav BQ sauce and bake them
