Here's three that we like a lot. They're all super easy and yummy
Blue Plate Beef Patties
From Taste of Home
INGREDIENTS
1 egg
2 green onions with tops, sliced
1/4 cup seasoned bread crumbs
1 tablespoon prepared mustard
1-1/2 pounds ground beef
1 jar (12 ounces) beef gravy
1/2 cup water
2 to 3 teaspoons prepared horseradish
1/2 pound fresh mushrooms, sliced
SERVINGS 4
DIRECTIONS
In a bowl, beat the egg; stir in onions, bread crumbs and mustard. Add beef and mix well. Shape into four 1/2-in.-thick patties.
In an ungreased skillet, cook patties for 4-5 minutes on each side or until meat is no longer pink; drain.
In a small bowl, combine gravy, water and horseradish; add mushrooms. Pour over patties. Cook, uncovered, for 5 minutes or until mushrooms are tender and heated through.
Beef Taco Bake
from Campbell's Kitchen
Prep Time: 10 minutes
Bake Time: 30 minutes
Serves: 4
Ingredients:
1 lb. ground beef
1 can (10 3/4 oz.) Campbell's® Condensed Tomato Soup
1 cup Pace® Chunky Salsa OR Pace® Picante Sauce
1/2 cup milk
6 (8") flour tortillas, cut into 1" pieces OR 8 (6") corn tortillas, cut into 1" pieces
1 cup shredded Cheddar cheese (4 oz.)
Directions:
COOK beef in medium skillet over medium-high heat until beef is browned, stirring to separate meat. Pour off fat.
ADD soup, salsa, milk, tortillas and half the cheese. Spoon into 2-qt. shallow baking dish. Cover.
BAKE at 400°F. for 30 min. or until hot. Sprinkle with remaining cheese.
Note- you can add chopped onions, garlic, black pepper when cooking ground beef. For a more substantial dish, add corn, black beans, and green chilies.
Beef Spinach Hot Dish

INGREDIENTS
1 pound ground beef
1 medium onion, chopped
2 garlic cloves, minced
1 can (4 ounces) mushroom stems and pieces, drained
1 teaspoon salt
1 teaspoon dried oregano
1/4 teaspoon pepper
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup (8 ounces) sour cream
2 cups (8 ounces) shredded part-skim mozzarella cheese, divided
SERVINGS 6-8
DIRECTIONS
In a large skillet, cook beef, onion and garlic over medium heat until the meat is no longer pink; drain. Stir in the mushrooms, salt, oregano and pepper. Add the spinach, soup and sour cream. Stir in half of the mozzarella cheese.
Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 15 minutes. Sprinkle with the remaining cheese; bake 5 minutes longer or until cheese is melted.
*really good and my 6yr old will eat the spinach!

My meatloaf recipe, it takes about 30 minutes prep if it's your first time trying it and 1hr in the oven.
My favorite:
2lbs hamburger
3/4 c. breadcrumbs - I use 1/2 roll ritz crackers
1/2 c. ketchup
1/4 c. onion
1/4 c. green pepper (about 1/4 of a normal pepper)
1/2 tsp. salt, 1/2 tsp pepper
2 eggs beaten
Mix all that together. Form the meatloaf, top with ketchup and spread aroud with a knife. Cook at 350 degrees for 1 hr.
I hope that's all right, it's from memory, but I've made it a decent number of times.

Chili
Ground beef, chili beans, tomato sauce, chili seasoning
Add seasoning including chili seasoning to the ground beef and cook til brown. Add beans, sauce, and beef into a pot. Put temp on low and allow to cook for about 30-45 minutes and enjoy....I eat with ritz crackers

If you've got any rice/pasta in the house and a can of tomato soup/sauce you can throw together a quick spaghetti.
Saute your beef with salt until brown and a little crisp. Throw in some minced garlic, black pepper, and your can of sauce. Season as you see fit, personally I like a little cumin or ginger.
If you're making a pasta make sure to put plenty of salt in the water before boiling.

Brown 1 onion in saucepan, add 1kg mince (ground beef) cover with enough water to just cover meat, add two chicken stock cubes or equivelant stock powder.Cook over medium heat for 45-60 mins 10mins before end of cooking time add 1diced carrot or vegies of your choice. When cooked thicken with a paste of plain flour & water.Put into individual ramekin dishes, top with mashed potato, sprinkle with grated cheese & bake in moderate oven till golden brown on top.If you have the time, let meat mix cool before putting potato on top & baking as this stops the mix from bubbling over the side of dish & soaking up potato topping as well.Serve with green veges & corn.

Hamburgers don't take long to cook or you can make them like meatloaf and just make patties and bake them in a cake pan like individual meat loaves. Regular meatloaf takes quite a while so sometimes I just put the mixture in a 8x8 cake pan and it takes less time to bake.
