Not everywhere in the Caribbean attracts the spring breakers.
Spring break typical starts mid March and ends mid April. (For Canada and USA) You will also have a week during President's week that attracts many families and teenagers.
We love traveling end of April, May and beginning of June.
We have friends that travel in November and love that month.
The prices of air and resorts also are a bit lower, after April 15th till Dec 15th.
Between June 1st-to Nov 30th is hurricane season in the tropics. September being the worst month for hurricanes. Also some island restaurants close in September and October.

actually it depends on where you plan to go -- I would up with spring breakers in Australia in November :-)
Usually as students they cannot afford to go far, so south east Caribbean would be good, as opposed to the usual places like mexico and Cuba and DR etc. Mid Pacific isles would be good, too. or Bali or Thailand.
March break / spring break varies across Canada and the US -- and even within a province or state, or by level of schooling. Grade schools and high schools and universities all in the same town can have different spring break times.
The rough estimate is when the airfares go up -- it's often as early as Feb 15 for some destinations and can go into third week in March.

rather than try to avoid people by age, i would avoid people by type. a higher class resort, while more expensive, can have specifics like 'couples only' (like sandals resorts). this way while you might run into a few twenty somethings, they are generally more responsible, as they are in a relationship and just like you, on a vacation together.
but be forewarned, from what i've heard, SOME 'couples only' resorts have clothing optional activities and beaches. i'm still researching sandals.com to find out if they're this way.
but really, it's not about age, it's about maturity level. couples will be less crazy and drunken than a party of five good friends.
