Anyone have a recipe similar to what you get in the supermarkets? Plain and simple. Nothing creamy.

NO FANCY MIXES OR DRESSING, JUST 5 ingredients. This is the way our local BBQ restaurant makes it, it's not all wet & sloppy, it's almost like KFC slaw. . Cabbage, mayo or miracle whip, sugar, salt & pepper. ABOUT THE SALT, that is what makes it watery, it draws out the liquid from any vegetable. So you don't have to put it in till your ready or they can just salt it when they eat it, doesn't really need it anyway. You can add some purple cabbage & carrots if you like. Now you pretty much need to put in the food processor to get it fine or grate it with a fine grater. Put in a big bowl, put a giant glop of mayo or miracle whip, tablespoon of sugar, salt & pepper right in the middle and just mix it with your hands. Adjust the mayo to your liking make it as dry or as sloppy as you want..

hmmm.. nothing creamy. I thought it was supposed to be sort of creamy. But I can see how it could be too creamy too. I have to say, I wouldn't buy, taste or even look at store bought coleslaw. Sorry, but I've had deli and supermarket coleslaws, and I've always found them to be rather disgusting, and well.. just taste commercial and not homemade. That said, I couldn't possibly give you what I'd consider to be a sub-par recipe. But here's how I make mine.

You can buy the preshredd cabbage mix or thinly slice a head of cabbage.
Add:
grated carrot (even if it's in the mix)
1 sm. grated onion
celery seed (important ingredient... several shakes of the container)
Mayo
apple cider vinegar
pinch of sugar
milk

Put cabbage in a bowl, add celery seed, grated carrot & onion
Add about 1/8 cup vinegar
A little bit of milk

Then start mixing the mayonnaise in until it's the desired amount... all is coated well. You can add a little more milk to thin it out a bit if it's too creamy. I think the milk is what will make the difference for you since you don't like it too creamy. I'm not all that much about measuring, more because I've been making it so long, I can make a pretty educated guess. Eventually you learn to adjust the mayo/ vinegar/ milk to desired taste & consistency. Even the sugar can be adjusted, but don't leave it out.

Easy recipe for Cole Slaw

Finely shedded white cabbage with a little bit of purple cabbage for colour if you want it. You can add some grated carrot to if you like the look. Now for the dressing in a seperate bowl.
Take about a cup of mayonaise, two - three tablespoons of American style mustard, 1/2 cup of white wine vinagar and add granulated sugar to taste, I like mine kind of sweet. Also nice to add some white pepper. Whisk this mixture up and pour over the cabbage. You dont want to make totally soaking wet as the cabbage will get softer after an hour and will be a sodden mess. Just use enough dressing to give it a good flavour. You can save the rest for another time. Put the mixed slaw into the fridge for an hour or two then mix it up and serve. Its a hit and takes about 10 mins if that to make. I was a chef for 20 years and people love this recipe. Good luck.

Fresh coleslaw should be 'reasonably' creamy if a good quality mayonnaise was used. Supermarket coleslaw has been hanging around for so long the salt in the 'mix' has drawn the water from the cabbage and made the mayonnaise so thin it looks like cheap white emulsion!
Make your own - if you like it not so creamy thin down the mayonnaise with lemon juice a little.

COLESLAW 6 cups shredded cabbage 1/2 cup sugar 1 cup shredded carrots 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 cup buttermilk DRESSING: 2 tablespoons vinegar 1 cup Miracle Whip Salad Dressing 1/2 teaspoon celery seed 3 tablespoons onions, chopped Add sugar, salt, pepper, and buttermilk to dressing. Pour dressing over cabbage mixture and mix well. Refrigerate at least 2 hours. Will keep for at least 1 week. Serving Size: 12.

Well, the coleslaw that is in the market does have a mayonnaise base, so I don't know what you are looking for.
Simple coleslaw is made by mixing together chopped fine cabbage and carrots with a dressing made out of mayo, a touch of sugar, salt, pepper, celery seed, and white vinegar.

Preparation time: 5 minutes.

Cabbage, either green or purple or both
Carrot
Green onion

For the version with mayonnaise:
Mayonnaise
Yellow mustard
Pepper

For the version without mayonnaise:
Rice vinegar or white vinegar
Sugar
Salt and pepper

1 Starting with a head or half a head of cabbage, thinly slice the cabbage until you have approximately 4 cups (not packed) of sliced cabbage. (Using a mandoline helps in this case.) Julienne a half of a carrot. Thinly slice a couple green onions.

1 For the mayo dressing version, add 3 Tbsp mayo, 1/2 teaspoon of yellow mustard and mix in with the cabbage, carrot, and onions. Add pepper to taste.

3 For the non-mayo version, add a couple tablespoons of rice vinegar. Sprinkle with sugar, salt, and pepper to taste.

Serve immediately. Serves 4.

Here's one that keeps for 1 week in the fridge.
In a small pot put 1/2 cup vinegar, 1/2 cup sugar, 1/2 cup oil, 2 tbsp. celery seed. Bring to a boil and pour over shredded cabbage (I buy the shredded stuff in a bag at the grocery store). Mix all up and refrigerate. Add a little paprika if you want and some diced celery.

1 small head cabbage
1/4 cup cider vinegar
1/4 cup mayonnaise
1 tablespoon sugar
1/2 tablespoon black pepper
1 teaspoon salt
PREPARATION:
Chop cabbage coarsely with a sharp knife. It's important to cut the cabbage and not crush it. Mix other ingredients in a large bowl. Add cabbage and toss. Perfect served on top of Pulled Pork.
