how this is done I think it had egg whites and peppermint essence in it at some stage?

Peppermint Creams
1 Egg White
450g (1lb) Icing Sugar
Peppermint Essence or Oil of Peppermint

Beat the egg white until frothy but not stiff.
Sieve the icing, adding enough to produce a fairly stiff mixture.
Add a few drops of the essence or oil.
Knead the mixture in to a firm paste and roll on surface dusted with sieved icing sugar.
Cut into rounds or form small balls and flatten.
Place the peppermint creams onto parchment or silicon paper, place in a warm place to dry for 24 hours.
Store in an airtight container.

In England we basically call them peppermint creams the recipe and method is listed below:

Egg whites, icing sugar and peppermint essence but I cant remember the proportions. I think you just add egg white until the icing sugar is rollable (if theres such a word). Then you cut them out, put cherry noses on. You can also make different coloured mixture with food colouring and make little scarves and hats and eyeballs etc. Wear plastic gloves when youre using food colour though.

You need icing sugar as well as egg whites and peppermint .Mix altogether in a bowl and then roll out to your own shapes.

Sounds like pepperment flavored Divinity? It is a white fluffy candy. My Mom always made it with pecans, but you can put any type of candy flavor in it.

oh i remember them.....also little peppermint mice for the rest of the year!!!with little silver ball eyes!(you could eat them too)!!yum yum
