From the King James Bible;

And he called their name Adam ..

This would suggest that Adam and therefore Eve was a gender specific designation for a particular species ... Human.

Reference the species;

Bovine - Bull & Cow
Deer - Buck & Doe
Chicken - Rooster & hen etc..

You take this much too literally. Adam is the spirit of man, and Eve is the spirit of woman. Homosapiens (the species) existed as animals, and God gave them souls. The man he called Adam, the woman he called Eve.

Also, in Sumerian texts, there are references to the great flood, which means that Noah and his family were not the lone survivors.

The 8 people after the Flood reproduced with each other. Shem, Ham and Japheth had children with their wives, and their children married their first cousins.
Cain married his sister. Adam and Eve kept cranking out kids long after Cain had left the nest. (How many kids can you have in 900 years?) Eventually, he meets a woman. It's his sister, but he doesn't care, because he didn't grow up with her. Besides, who are you going to report him to?

Some literalists accept that as a possibility, because the alternative is a bit uncomfortable (would God really create a species whose only possible means of reproduction was generations of incest?). The problem is, the Bible never states anything of the kind, so for them, it's all speculation.
