There was only one I could find that didn't have stuffing:

I suspect that the filling in the cavity serves the purpose of keeping the MASS of meat from compressing so it can cook thoroughly without drying out. This one at least only has veggies; you don't have to eat them....

Go to your local supermarket and buy a turkey, duck and chicken. There you go, an non-stuffed turducken.
