I like to get the prepackaged pie dough and make a turkey pot pie... Just cube the dark meat into bite sized pieces add some mixed frozen vegetables. Place pie crust inside bottom of pie pan/ layer with turkey/gravy/veggies. Top with other pie crust. Brush with eggwash.. 1 beaten egg w/ water OR milk added (acouple tablespoons).. Bake until golden.... Don't forget air/steam vents on the top !
Or spray 13x9 inch cassarole with non stick spay....chop turkey into pieces and mix with frozen mixed vegetables.... Put into baking dish. Top with Grands bisquits or smaller bisquits and bake until golden....

There is a recipe called " **** on the shingles ", I know it isn't really a nice name for the dish but having been a service brat you hear different things! Any way they used ground meat with gravy and put it on top of toasted bread. Easy as that. In your case use the turkey with gravy and put it over toast bread.
You could add some green chili to the turkey with a cream of mushroom soup, onions, garlic and maybe some sour cream. Fry the tortillas and layer them in a baking pan. Next put a layer of the turkey and then the fried tortillas and so on. You could mix in some cheese (cheddar) into he turkey mixture or sprinkle after each layer. Top the casserole with cheese and bake until heated through and the cheese is melted.

I had the same dilema the other day--I made chili out of mine. This recipie won't use up your gravy, but I'm sure you can find some bread to pour that over later.
Try to shred the turkey--cutting it up is fine, but it came out really good when I pulled it apart by hand in long strips. I was going for quick chili, you could modify this for a crock pot if you have time for that. I'll make this recipie for 1 pound of turkey. I'm going to mention some peppers, if you can't or don't want to get to a store for them, substitute a good hot sauce.
Throw the shredded turkey into a frying pan or wok with about a cup of water. Add about 3 tablespoons of chili powder, a tablespoon of cumin. Start that cooking, once it boils turn it down to simmering heat and then start adding the rest. (Dice or mince all of these peppers.) Put in one jalepeno, one serrano (or another jalepeno), and one pablano peper. Simmer that as long as you can stand not eating. (At least ten minutes, up to an hour--it's up to you.)

turkey spaghetti -
left over turkey cut into bitesize pieces
one can cream of mushroom soup
one green bell pepper chopped
one small onion chopped
one small can of mushrooms
one package of spaghetti noodles (cook as directed)
one tbs olive oil
water (as needed)
sautee onions, bell peppers and mushrooms in oil until vegetables are tender and then add left over turkey. continue to heat through until turkey is warm. Add one can of cream of mushroom soup and a little water to make it not as thick. add noodles and heat through.
