Egg in a frame-- butter two sides of a piece of bread and cut a circle out of the middle of the bread (about 2 1/2 inches in diameter). Heat the skillet over medium heat and place the bread into it. Crack the egg straight into the hole of the bread. Break the yolk if you would like, but it is great whole and add salt and pepper. Let the egg cook for about 2 minutes and then flip the bread with the egg inside with a spatula. Cook on the other side until egg is done, about 1-2 more minutes. Eat right away!
The best Fried Egg Sandwich you will ever eat!
2 teaspoons butter
1 egg
salt and pepper
2 slices whole wheat bread
cheddar cheese
mayonnaise
-Place a small pan on a burner. Add the butter and heat on medium high heat. (Make sure not to heat the pan on high, or else the egg will turn rubbery.). After the butter has melted, crack the egg in the pan. Let sit for about a minute. Pop the yolk. Sprinkle with salt and pepper. When egg is set, flip over and cook other side. Cook egg to your liking. Meanwhile, spread mayonaise on bread and place cheese. Place the cooked egg on top of the cheese, so it will melt. Top with other slice of bread. Enjoy!
Egg Pizza
4 eggs
1/2 cup grated mozzarella cheese
1 tomato, thinly sliced
1/2 teaspoon oregano
additional pizza toppings (optional)
-Scramble eggs. Pour into greased pan. Sprinkle cheese over hot eggs. Lay sliced tomato on top of cheese and sprinkle with oregano. Place under broiler until it begins to bubble. Add toppings as desired.
Garden Omelette (The ingredient list is long, but it's outstanding!) And remember, make this according to your taste, omit the veggies you don't like and add as you please.
1 egg
2 egg whites
1 tablespoon non-fat coffee creamer or skim milk
1 small shallot, diced fine
1/4 cup bell peppers, diced
1/4 cup baby portabella mushrooms, sliced
1/4 cup fresh tomatoes, diced
1/4 cup shredded low-fat cheddar cheese
1/8 teaspoon onion powder
1 teaspoon fresh thyme, chopped
1/2 teaspoon fresh chives, chopped
2-3 drops Worcestershire sauce
1/8-1/4 teaspoon hot sauce (optional)
1/4 teaspoon minced garlic
1 pinch cajun seasoning
salt and pepper
-Spray small skillet with non-stick spray. Add shallots and garlic, cooking over medium-low heat for 2-3 minutes, adding a few drops of water as necessary to prevent sticking. Season with salt and pepper; add bell peppers and saute for a few more minutes before adding mushrooms and 1-2 tsp water, continuing to cook until vegetables are tender.
Remove from heat and drain any excess liquid. Stir in tomatoes. Beat together egg whites, yolk, creamer (or milk), and remaining seasonings (onion powder, thyme, chives, Worcestershire, hot sauce, and Cajun seasoning). Generously coat a medium sized skillet with non-stick cooking spray; heat over low to medium-low heat. Pour in egg mixture. When egg is mostly set, sprinkle vegetables over surface; then sprinkle cheese on top of vegetables. As cheese begins to melt, fold omelet approximately 1/3 over towards center, and the remaining third on top of that. Slide omelet onto serving plate. Garnish with a sprinkle of paprika if you desire. Serve.
Enjoy!

if you like tortillas then you will like this recipe. Put a little bit of oil in the pan and heat it up. Take about 3 corn tortillas and rip them up, into bite size pieces, and put them in the oil. Cook them for a few mins until they start to get a little crispy.
Scramble 2 eggs in a bowl. Once the tortillas are crispy, pour the eggs on top of them and then cook it. You can break it up while flipping it around or you can cook it like an omelette.

I load my scrambled eggs up with vegetables...thinly sliced asparagus, green onion and spinach is my favourite.
Take two eggs and beat them with two teaspoons of light cream, salt and pepper and set the mixture aside.
Thinly slice asparagus and green onion (about 1 to 2 tablespoons each and julienne fresh spinach (about 3 to 4 tablespoons) and saute in a tablespoon of light olive oil until wilted but not browned. Add the egg mixture and a few slices of brie and scramble until the eggs is in soft curds and the cheese has melted in.
Serve over buttered toast.
If you like meat in your eggs saute some shredded ham or prosciutto with the vegetables.
