traditional - pork loin

2 1/2 pounds boneless pork loin roast
1 cup real maple syrup
4 tablespoons prepared Dijon-style mustard
2 1/2 tablespoons cider vinegar
2 1/2 tablespoons soy sauce
salt to taste
ground black pepper to taste

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Stir together the maple syrup, mustard vinegar, soy sauce, salt, and pepper in a small bowl. Place pork roast in a shallow roasting pan. Spread glaze evenly over pork roast.
Roast pork in the preheated oven uncovered, until internal temperature measured with a meat thermometer reaches 160 degrees F (70 degrees C), about 1 hour. Remove from oven, and let rest about 10 minutes before slicing to serve.

INGREDIENTS
1 cup chopped onion
1 pound sirloin steak, cut into bite size strips
1 teaspoon minced garlic
2 (7 ounce) cans diced green chile peppers
4 cups tomato sauce, divided
2 teaspoons chili powder
1 (12 ounce) package corn tortillas
1/2 cup fresh salsa
3/4 cup chopped black olives, drained
2 cups shredded Cheddar cheese
1/2 cup sour cream
1/3 cup chopped green onion

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large casserole dish.
In a skillet over medium heat, saute onions until almost translucent. Stir in beef, garlic, and chile peppers, and continue cooking until the meat is no longer pink. Pour in the tomato sauce and chili powder. Mix thoroughly and heat through. Remove from heat.
Spoon a little of the meat mixture into a corn tortilla and add small amounts of salsa, Cheddar cheese and olives. Fold the tortilla up and place in the prepared casserole dish. Repeat for the remaining tortillas using up all of the meat mixture. Reserve 1/2 cup of Cheddar cheese for topping.
Pour the other half of the tomato sauce and sour cream over all of the tortillas. Top with green onions and 1/2 cup of reserved Cheddar cheese.
Bake 30 minutes in the preheated oven, or until hot and bubbly.


dessert- apple pie

1 recipe pastry for a 9 inch double crust pie
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced

DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.
Baking pie is a rather straightforward technique, but a few tips can only help to make your pies come out looking and tasting perfect!

Have you ever been to a clothes swap party? Everybody takes along a bottle of wine and a bag of clothes...The clothes are piled into a heap in the middle and people take it in turns to hold them up and give them the hard sell..It's really funny...Have a dice or a pack of cards to roll or cut for the winner when there are more people interested in an item.. You could ask your friends to bring all their silly daft stuff, and you might manage to cobble together an outfit...even if you look like a throwback from the 80's..! It's a good laugh and it's good to recycle and re-use stuff...Have you been on Yahoo's Freecycle? There's probably one in your area...You could ask if anyone has a a spare outfit in the back of their cupboards....Have a very merry Christmas..!

Candied yams. This is a really simple recipe. Peel and cut up about 4 sweet potatoes in bite sized pieces. Some people boil them, but I prefer they are steamed. Even easier is to bake them, but you have to pay more attention, because it's easy for them to overcook, but if you do it this way you don't have to peel them. You want them slightly underdone.

Then mix together about 1/2 c. each brown sugar and orange juice, a stick of butter, a pinch of salt and a sprinkle of cinnamon and nutmeg. Put this in a non stick pan and bring to a simmer. Taste it, you might want to add more cinnamon and nutmeg. Once the sugar is totally melted add your cubed potatoes. Let it simmer for about 20 more minutes. They will get a nice caremel color and you should have extra sauce. It travels and reheats well.

my husband's strawberry shortcake makes a great Christmas dish, or any family get together. His family asks for it all the time: this will go a lonnnnggggg way but you can cut the recipe in half and still have a lot of cake.

2 boxes strawberry cake mix
2 large boxes of strawberry jello
2 large boxes of butterscotch instant pudding
2 packages of fresh strawberries or frozen, thawed
4 tubs regular sized whipped topping

Preheat oven to 350 degrees. In a mixing bowl, fix both boxes of cake mix according to directions on box. Pour batter into a large roasting pan and bake for 30-45 minutes. When done, remove from oven and poke holes in cake with fork. In a small bowl, mix boxes of strawberry jello according to directions on box and pour over cake. In another bow, mix pudding according to directions on box. Make sure all jello has settled into cake. Spread pudding over cake. Add strawberries. Top off with whipped topping. Refrigerate for 2 hours and then serve.

Here is another dessert that is easy, fun and goes along way...its is an orange jello salad......you can use any flavor jello you want like lime to make it more christmas-y

Ingredients
1 15 1/2-ounce can crushed pineapple
1 6-ounce package orange Jell-O or any other gelatin
1 cup coconut
2 cups buttermilk
1 cup pecan pieces (optional)
1 12-ounce container whipped topping

Instructions
Pour pineapple and its juice into saucepan and bring to a boil. Remove from heat and stir in Jell-O until dissolved. Cool. Mix in coconut and buttermilk. Add pecans, if desired. Fold in whipped topping. Pour in bundt pan or ring mold that has been sprayed lightly with cooking spray. Refrigerate until congealed.

We like to make Velveeta Cheese Dip with hamburger in it on Christmas Day.
There are many years where we don't have the traditional meal, but we snack and dessert all day.
So this one goes far, the kids love it, it keeps well in the crock pot, and best of all, there is never any leftovers.

For a simple dessert, you can make Rice Krispy Squares, but add red and green food coloring to the heated marshmallow mixture.

For a main course, a rib roast is easy...just season with salt and pepper and cook in the oven (covered) at 375F until medium-rare to Medium (use a meat thermometer). Garnich the serving plate with mint leafs and cranberries to give it a festive look.

For sides, steamed red and green veggies, lemon roast potatoes (you can boil them first to cook them half way and then roast them with the rib roast...after boiling, season with salt/pepper/lemon juice).

Make sure you have some fresh country bread and butter on the table.

Normally i would just say fruit, but i think both. I really like the sugariness of the fruits but i love the piquancy and kick the vegetables bring
