Is there a secret way to cooking them? Honestly, I follow the directions on the box of bisquick and they end up all bubbly and weird looking, then after eating them, they sit at the bottom of my stomach like a pound of bricks.

Make sure your griddle is hot enough and that you are using the RIGHT measuring cups the glass "pyrex" kind for liquids, and the regular measuring cups for the flour, etc.

I use Aunt Jemima pancake mix. (the one where you add milk, eggs, and oil) I follow the directions on the package. 375 degrees, grease it, heat up the griddle, make the mix. Be careful not to stir too much. Add more milk if the batter seems to thick. (Add small amount at a time)

You could be cooking the pancake mix at too low of a heat or the batter is too thick or it could be a combination. Try thinning out the pancake batter. You could also be stirring it too much. You want to stir it just until the batter and water (or milk, etc.) are mixed. Don't go beyond that. That stiffens the pancakes otherwise.

You have to make sure the pan is very very hot and only lightly (and I mean lightly) oil the pan. I usually take a paper towel and dab oil onto the hot skillet (make sure the towel is folded over enough times so as not to burn you) The pan should not be glisening. The bubles you are talking about are a result of too much oil.
As far as tastes, try adding some sugar to the mix as well as some vanilla extract. The vanilla adds a really nice flavor.

Replace about half of the liquid with beer and let the batter sit and rise. I promise they will be light and fluffy.

they keep changing the way biscuick is made, there is nothing to it anymore but flour and a little lard. Try another brand or make them homemade.

i always add sprinkles to my pancakes and it makes them taste 100% better !! try that or throw in some chocolate chips cinnamon or coconut =]
