The Gothic Voices album 'A Feather on the Breath of God' - music by Hildegard of Bingen. It is sublime.

I also love 'Sabbatum' by an Estonian group called Rondellus. It is lyrics by Black Sabbath translated into Latin, with new melodies and played on medieval instruments. It's awe-inspiring!
