Can we simply deem all seafood halal?

The majority is not always right. What if Abu Haneefah was right on this issue?
Scholars agree that all amphibious animals are haram. Lobster will live quite a long time after it is pulled out of water.
In hadeeth analogy, the more specific hadeeth usually prevails over general hadeeth. But the question is whether 'food from sea' refers only to fish or all types of seafood...after all, we should look at the Revelation through the eyes of the society Rasulallah a.s.w.s. lived in - did they eat shells, shrimps, crabs ... ?
There is no hadeeth that would say that any of the early generations ate except fish and whale.

I was told by Malay fishermen that they found lots of squids feeding on bodies of deceased in the 2004 tsunami.

Don't forget the other hadeeth: "Two carrions have been made lawful to us, and two bloods. The two carrions are fish and locusts, and the two bloods are the liver and the spleen." (Ibn Majah, Ahmad, Al-Daraqutni, Al-Bayhaqi)

But considering the hadeeth I quoted it would be difficult to proclaim seafood other than fish halal... It would still require the slaughter.
Regarding those who say that only what was explicitly mentioned in Al-Qur'an as haram is haram, there is no tahreem of dog meat in Al-Qur'an ... ? Thus we need to consider other sources as well.
Abu Bakr's opinion doesn't explicitly mention that seafood other than fish would be halal.
From medical point of view, too much squid causes gout, too much shrimps weakens teeth, oysters are frequent cause of food poisoning... When I said "too much", nothing will happen to the one who eats too much beef or too much sardine. Shells and snails are cleaners of the sea, they eat all the impurities and toxins that are inside the water. Shouldn't we consider the scientific point of view also?

My husband and I both disagree with many scholars who say all seafood is halal. We really believe that anything which feeds off another animal is not halal. Also, many places are taking the lobsters alive and will kill it by placing them in boiling water, we believe this is a haraam way of killing any living thing.
There are many animals which live in the oceans like bullshark which are known to go into fresh water and eat other creatures(humans) etc...Or Crocodiles which go from land to lakes to oceans feeding like scavengers. I could not see myself eating a dolphin or whale. I read a fatwa issued(forget who issued it) saying that if mermaids existed that they would be halal to eat..lol
The Quran does not tell us all the things which we know are Haraam. Like lions, hawks etc...

Like we cannot have water snakes. Sharks are Haram as they eat man too.
-Fishes are halal
-Crabs are Makrooh ( we can have them, its halal but its better if we avoid them)
-Shrimps,prawns,lobsters --- makrooh
-Octopus Few says its halal few says its haram and there are people who says its makrooh.. SO I avoid it. I think its haram but m not sure.

Yes, All seafood is halal according to the vast majority of scholars, for the general meaning of the verse: {Lawful to you is the pursuit of water game and its use for food, for the benefit of yourselves and those who travel; ….}[5:96]. Also for the general meaning of the verse: {It is He Who hath created for you all things that are on earth; ….}[2:29]. In addition to these verses, the Prophet (Sallallahu Alaihi wa Sallam) said about the sea: Its water is pure and its Maytah (dead animal without legally being slaughtered) is lawful.
EDIT: amphibious animals are considered haram only if they are born and give birth on land. otherwise, they belong to the category of seafood.
Allah (swt) knew that sea contains many types of animals, if he meant fish only are lawful, he would say fish only are lawful, not seafood.
The Qur'an also mentions the food of rivers [35:12] although there are no rivers in Arab peninsula
Also we have to put the saying of the companions in consideration, for example Abu Bakr said : the seafood is all what in it.
Non of us has reached the level of knowledge that allows him to make ijtihad .. the scholars know what they are talking about and how the rulings are derived from Qur'an and sunnah .. when the vast majority os scholars agree on something, it's much safer to follow them.
The other opinion is extremely weak.

According to the Hanbaliy and Shafi'ee scholars, all living creatures that live in the sea are halal, whether they are in the form of a fish or not. (Fiqh alal Madhaahib al-Arbaa). Based on this, oyster, oyster extract, shrimp, lobster and shark are all halal and permissible.
According to the Maliki scholars, every living creature of the sea is halal except eel. (Ibid) Hence, oyster, oyster extract, shrimp, lobster and shark are halal and permissible.
According to the Hanafi scholars, the only living creatures of the sea that are permissible are those that are in the form of a fish with an exception of the hagfish and eel. (Ibid). (these 2 even though they are not in the form of a fish they will be permissible to consume).Hence, according to the Hanafi scholars, it will not be permissible to eat oyster, oyster extract, shrimp and lobsters. It will be permissible to consume shark as it is in the form of a fish.
“Lawful to you is (the pursuit of) water-game and its use for food – for the benefit of yourselves and those who travel…” [al-Maa’idah 5:96]. Ibn ‘Abbaas said: “ Sayduhu (lit. hunting, pursuit) refers to whatever is taken from it alive, and ta’aamuhu (lit. its food) means whatever is taken dead.”
