(allrecipes.com) is a great website where you find pretty much everything,my wife is a chef and she says a nice simple recipe is smoked salmon with ricotta,goats cheese and caramelised onions with a touch of tyme, or for the vegie option
some blanched spinach with recota and parmesan and season well..good luck

You might also consider using a puff pastry as well. Here are some ideas:
1. The traditional spinach, ricotta, honey, pinenut filling
2. Gorgonzola drizzled with honey
3. Mushrooms stuffed with boursin herb and garlic cheese
4. Smithfield ham, sliced thin, with dill havarti
5. Brie with caramel and pecans
