Well, you can eat fruit, vegetables, grains, beans, and nuts--pretty much anything that isn't meat, gelatin, or rennet in cheese. Gelatin is made from the hooves, hides, and bones of animals. Rennet is made from the fourth stomach of veal calves and is used to help coagulate cheese. The dairy industry, by the way, fuels the veal industry, something you may want to consider on your vegetarian journey.
One thing that helps many people transition to vegetarianism are the many analogues available. There are veggie burgers, veggie sausage, veggie crumbles, veggie deli slices, etc. Your natural foods store should have them, typically in the freezer case or the refrigerator case.
Go to www.happycow.net and www.vegdining.com to find vegetarian and veg-friendly restaurants.

Good luck!

I've become a vegetarian a week ago and I found chicken noodle soup (minus the chicken) tasty. Oatmeal, salad, and fruits are good too. You should also try vegetarian sushi and vegie burgers as well. Hope this helps!
P.S. The reason I became a vegetarian was because 100s of cows are injected with steroids to produce more milk and meat (their also treated cruelly before being slaughtered for our sake) and once they have been killed, they take the meat and mix it with hundreds of other cow's meats and mix it into a liquid, freeze it, ship it to the company (EX: McDonalds) and cook it or microwave it. Enjoy (sacrastic tone)!

Oh, no, you shouldn't go cold turkey before you go shopping! If you really and seriously want to cut out meat from your diet, you need to go to the store and stock up on some staples:
1. A good vegetarian or vegan cookbook. It's nice to take them out of the library too, but I would reccomend buying one that you especially like to mark pages and because of the wear-and-tear it will take.
2. Buy beans of all sorts - kidney beans, chickpeas, navy beans, etc.
3. Buy nuts and nut butters - almonds, peanut butter, cashews, etc.
4. Purchase good spices.
5. Get a few trays of tofu (you can buy tofu very cheap at Whole Foods or Trader Joe's in my neighborhood; it's more expensive in mainstream grocery stores). Look up online how to press and prepare tofu for cooking before you cook with it, because you'll get a soggy and sad mess if you don't.
6. Purchase soy milk or rice milk if you don't want to eat dairy products.
If you insist on going cold-turkey before you're completely prepared, I would reccommend eating calorie-dense foods like dried fruit, nuts, avocados and peanut butter AND take a vegetarian vitamin supplement daily.
